And I suggest turnip, myoga and celery as substitutes.

Sake 200 grams
Mirin 100 grams
Starch syrup 170 grams
Soy sauce 80 grams
Tamari shoyu 10 grams
Rice vinegar 15 grams
Kombu 5 grams
~Vegetables~
White radish(daikon) 400 grams
Cucumber 250 grams
Carrot 100 grams
Eggplant 150 grams
Ginger 15 grams
Hojiso 5 grams
Lotus root 150 grams
