Today, I introduced how to make Japanese traditional pickles, Fukujinzuke(福神漬け). It needs a lot of work, but the taste is so good. We can store it for about 10 days in the fridge.
And I suggest turnip, myoga and celery as substitutes.

Recipe
~Sauce~
Sake     200 grams
Mirin     100 grams
Starch syrup   170 grams
Soy sauce     80 grams
Tamari shoyu   10 grams
Rice vinegar    15 grams
Kombu      5 grams
~Vegetables~
White radish(daikon)  400 grams
Cucumber     250 grams
Carrot        100 grams
Eggplant      150 grams
Ginger       15 grams
Hojiso       5 grams
Lotus root     150 grams
