Hello and welcome to Updunderwork!
Today we're making a Japanese dessert, we're making matcha chocolate.
It's a refined, decadent dessert that's a bit out of the ordinary.
And it's going to end up very well, it's going to match the Japanese theme.
And on top of that, there aren't a lot of ingredients, it's super quick to make.
And I'm telling you, if you like matcha, it's really a dessert for you.
It often happens that I taste a matcha dessert and I find that it doesn't taste like matcha.
Here, it's quite present, without being too much there, because it's not too bitter either.
It's still accessible for children, ours love it.
And we have no doubt that all of your guests will like it too.
It's just so good, you'll see.
We're going to start without further ado with the list of ingredients.
If you want the written and printable version, it's going to be on our blog, christinaponvin.com.
And if you like our videos, don't forget to leave a little thumb and a comment below.
For the recipe, we only have 4 ingredients.
We have 35% whipped cream.
I didn't try it with 35% cooking cream, it probably works too.
We're going to use a quarter of a cup, which is 65 ml.
We're going to start by mixing it in a small saucepan, off the heat,
just to have time to mix the matcha well before starting to heat it up.
So the second ingredient is 2 teaspoons of matcha powder.
And it can be a little complicated to buy matcha sometimes at the grocery store,
because there are so many kinds of teas.
Sometimes we're not sure if it's green tea, if it's matcha latte.
We ended up just buying it on Amazon,
because that's where we found the best quantity for the price.
We'll put the link below the video too, if you're ever looking for the same.
And you'll notice that when it's salted in a bag, the matcha is quite compressed.
It can make a lot of lumps.
We absolutely have to sift it, just so that it mixes better with our cream.
Once the matcha is well sifted, we will mix with a whisk.
No need to whip to the point of making a whipped cream.
Just enough for the matcha to be well distributed.
And when it's cold, we feel like there are still a few small lumps.
It's normal.
It will disappear while heating.
Like that, for me, it's okay.
Even if we see that deep down, it's not super smooth yet.
After that, we will add 2 tablespoons, about 30 grams of butter.
I use semi-salted butter.
I like it when there is a little salted sugar.
But it could also be unsalted butter or salted butter.
Go ahead with what you have in the fridge.
We're going to be ready to go on the fire, but just before that,
there are two things left to look at together.
Prepare 200 grams of white chocolate.
Here, we don't need preparation, because I take white chocolate chips.
I find that the recipe works very well with that.
But you could also take chocolate pallets that you chop with a knife.
Chop into small pieces, about the size of chocolate chips.
It will be much faster to mix.
And there, it's sure that if you take the best brand of white chocolate,
it will make a dessert that is more refined.
But very sincerely, I take selected chocolate chips
and it makes a decadent and excellent dessert.
Last little thing to have together,
you have to prepare a dish right away.
For me, it's a square dish of 5 inches by 5 inches.
And we're going to cover it with parchment paper.
Don't pay the same attention as I did to take plastic wrap.
Because when the time will come to separate your chocolate,
it tears everything and you're stuck with plastic on your chocolate.
Unless I just wasn't lucky.
But it didn't work well for me.
And me, it's just two little pieces of parchment paper
that I wrap one on top of the other.
It doesn't matter if it's open on the corners,
the chocolate won't all flow underneath.
Okay, that's ready.
Let's move on to the kitchen.
We're going to heat our pan over medium heat.
We want to melt our butter.
And we can mix all along,
just to make sure it doesn't burn at the bottom.
We don't want to bring it to a boil, but almost.
When the butter is all melted,
and we see that the cream starts to move a little bit,
it's like little stirs,
but it's not boiling yet,
that's when we're going to remove it from the heat.
And we're going to add our white chocolate right away.
We're going to stir it with a whisk.
It will melt very quickly.
And we stir until everything is uniform.
When it's uniform like that,
we can pour it all into the dish with the parchment paper.
Take a silicone spatula to scrape all the chocolate.
And then we let it cool in the fridge for 2-3 hours
Once it's cooled down, we're ready to cut it.
So we take it out of its mold and cut it into small squares.
You can make big squares or smaller ones, it's up to you.
You can put it on a nice plate
and just sprinkle it with a little more matcha.
Once again, go with a sieve so that it is well uniform.
And we have to leave it in the fridge until we're ready to serve,
otherwise it might soften a little too much.
Okay, take a big one.
As you can see, it's not too bitter for the kids.
Here, I have to stop them from eating it.
Hey, you won't sleep at night!
They're melting, it's so good.
Seriously, you have to stop eating it.
It's really too good.
Magnificent!
Really pig too.
And you'll see, the quality of the matcha is really there
because it's much tastier

You had to choose one, didn't you?
Is it good?
Are we going to give it to Jack?
Yes!

Here, Jack.
You can wait a little longer if you want a much firmer texture.
Yes, wait, wait, wait!
Wait!
And we have to leave it.
Well, finish your bite first.
Stop! Stop!
And there's some left.
Do you like that?
Yes!
We don't leave any for dad.
Is it good?
Okay, okay, leave it to dad.
