I love sweet peppers because of the rich flavour they add to the cooking end game. They come in various colours, green, yellow, red and orange. Each colour with a different measure of acidity. The yellow colours are sweeter normally but overall, they are great in the kitchen. Sweet peppers bring a lot of flavour and edible “sweetness” to the cooking. Whether you are using them as part of the flavouring or garnishing, it’s impossible to overlook the vibrancy they bring to the kitchens. I prefer to dice rather than strip cut, whatever works for you, savour the moment. The best way to store them is whole. However you can chop them up ready to use for garnishing etc,. And then store whatever is left in the freezer. Bear in mind that frozen diced peppers may not be suitable for garnishing ( soggy, wet and lacklustre) but will be ok for cooking .
