Whichever you use, the result is the same. Aubergine is readily available here in the U.K, it’s cheaper and lacks that sour-harsh after taste in garden eggs. They have a richly succulent and pulpy texture to the mouth.

Seasoning
Per boil Slice aubergine, onion and sweet peppers. Blend the mix. Heat up palm oil and add tomatoes purée or mix, crayfish and fry fish. Add the aubergine paste and seasoning and allow to stew.
