Wash thoroughly to remove any residues, blood , tissues, paying close attention to the gills and belly. Allow to drain out. Rub in fish spice all over the fish, paying attention to the head. Make little slices across the flesh to allow the spices to infuse deep into the tissues. Place in a pan and allow the spices to soak in.
