
This Tuscan Soup is full of Vegetables, Protein and Crusty Bread
If you’re a soup lover like me, then you must try this Tuscan White Bean Soup! It’s delicious and hearty, perfect when you need a bowl of comfort food.
The soup is packed with veggies and topped with crunchy croutons to soak in the creamy broth. YUM!
Ingredients
2 cans (15oz / 425g cans) cannellini beans
Small bunch of Tuscan kale
4 thick slices stale bread such as ciabatta, tuscan bread or sourdough
4 cups vegetable broth
1 onion finely diced
2 carrots finely diced
2 celery sticks finely diced
4 garlic cloves diced
1 potato diced into cubes
15oz / 425g can whole peeled tomatoes
2 tablespoons extra virgin olive oil
1 sprig of fresh rosemary or thyme
1 bay leaf
Salt and black pepper to taste

*Optional garnish of grated parmesan cheese
