Demerara
Demerara
Fancy Free
Bourbon
CVD
So with the cognac, you want to look at something that marries a similar weight to the whisky
You want to have something that acts as a complement
So you end up with a little bit of those kind of orchard fruit notes coming from out within the cognac
I think something that's got a little bit of extra age, it's got a bit more of a finesse to it
Something kind of VSOP kind of territory works really well
To be able to have the kind of right balance of stone fruit notes, a bit of florality
and a little bit of kind of, well, a bit of extra spice in that kind of French oak in the background as well
So we're going to take the mix of our spirits
And to that, we're going to add our dilution
So we're going to use 115 grams of water
We're going to use 150 grams of sugar syrup
And then we're going to use our bitters
And by being able to measure it out in this way, we can control exactly the effect that these are going to have
So bitters are kind of like the seasoning of your drink
They're there to kind of bridge all the other flavors together
But they also act a bit of a pop of spice in the background
So with the Angostura, you're getting a lot of kind of, well, spice notes really
It's all of the things that you're picking out from within the whisky
A little bit of kind of woodsy notes, a little bit of kind of darker kind of fruitiness as well
And it really acts as this kind of base in the background of the drink
So we're going to use 4 grams of our Angostura bitters
And then as a complement
And again, a nod to, I suppose, that Sazerac style mix of the cognac and the whisky
We'll use some Peychaud bitters
Again, it acts as that bridge
It kind of helps link the other flavors together
It seasons together the drink
But it also adds in a little bit of kind of like a cherry anise note
So 2 grams of our Peychaud bitters
And we're simply going to stir this to ensure mainly that the sugar is mixed into the drink
And any of the suspension is throughout the cocktail
And then we're going to decant it into our bottle
Now the beeswax does kind of make it slightly opaque
But what you should be able to see is the wash line as it rises
So it takes on a slightly translucent kind of feel where it peeks its way through
So it makes it easy to not overfill the bottle
And then we're going to seal this up and chill this down
So what you end up with is this kind of beautiful oddity
That you can kind of see the liquid through
But you've also got this strange kind of opacity around it as well
So it's ideal, it's ready just to stick in your fridge as soon as you need a drink
We're just going to pop it out like a wine and pour it
But it's also something that's amazing to gift to friends
So you can customize, you can choose different whiskies
You can wrap it as a present
And it's a wonderful way of having something that feels very customized
And very individual to gift
I draw little labels for my friends
Where I kind of nod a note to something that's been in a certain occasion for them
To be able to market with something
You know, this is something that continues to evolve
It's got a real organic matter to it
So it's really nice to be able to kind of gift it
And kind of create something that feels very special and very unique to your friends
So the beauty of this drink is you can treat it like a wine
You don't need any additional ice or anything like that
You can just serve it as it is
So we've chilled this down just like you would in a fridge
And we're going to serve this in a stemless wine glass in a frozen glass
And the fun thing about this is it kind of inverts the feeling of a classic old-fashioned
So with the classic old-fashioned, it's served over ice
It starts quite rich and then it thins and dilutes
As it opens out over the ice
You get a little bit more of that sweetness coming forward
You get a little bit of that hint of that citrus
Serving it this way
The first sip, you go to reach your nose into the drink
At first sip, it's quite sweet
And it got this extra body to it
Because of the chill and because of the beeswax
But as it starts to warm up
As you sip through it, as you hold on to the glass
It changes in the opposite direction
The beeswax kind of builds up on your palate
You get more of this spice from the whiskey and the cognac come to the fore
So it really starts to kind of really blossom into something
That's a little bit more of that hug
It's a bit wintry
It's got a little bit more of that kind of chewiness
And that extra spice and weight behind it
You can also start to add a couple of accents around it
You can nod to the kind of Sazerac mix of the two
So keep some absinthe in a dasher bottle
And just a couple of dashes
Just lift some of those kind of aromatics out
It changes the way that you pick up some of that weight
And you can just do a little swathe of lemon peel
Like you would do again a Sazerac
And simply have a lemon to hand
Take a little zest of it across
And it doesn't need to drop into the drink
It's just that aromatic
But if you want to lift out some of the kind of white flower notes
Or the tropical notes within it
You can do a little grapefruit coin
And of course if you want to be able to go to war
Of a kind of classic old-fashioned
Take a bigger rocks glass
Serve it over a hunk of ice
And it'll still start to open out in that way
You'll get that beeswax aroma
You'll get some of that extra chewiness
And that kind of luxurious weight that it brings
But it'll start to kind of take it in that more classical route
Where you eke out those flavors as it dilutes
So we've added the absinthe
And we've got the lemon twist over the top
So that first aroma
It's kind of this play between this honeyed note
And also this kind of beautiful citrus aromatic
It kind of goes a little bit like
The best candle you've ever smelled
And it's got that real allure of
Kind of the whiskey in the background
It's the, you know, it's clearly a big drink
You know, this is something that is something to sip on
It's designed to change
It's not something you kind of nail in one go
So the first sip is very different to the last
At first there's a real nice warmth and weight to it
You get a marriage of both
What the cognac brings to the play
It's the kind of real delicacy that starts it off
And then you get the real warmth of the bourbon
That's what starts to kind of round it out
And then what finishes is
This kind of aromatic of the beeswax
The absinthe really helps kind of lift
The kind of brighter note to it
But it's just there in the background
Just to give this extra weight
And the really nice thing is
As it starts to warm
That's what you notice
It's something that you can kind of really lean into
You get a little bit more of this kind of extra spice
It's something that
It just feels very kind of warming
And kind of rich as a serve
It's everything you want an old-fashioned to be
With this extra layer on top of it
But it's one of our signature serves
One of my favorite drinks
And it's the beeswax old-fashioned
