Okay let's start by soaking the rice cakes in warm water for about 10 to 20 minutes just to
help soften up these little babies. Don't use super hot water otherwise they'll crack and
cracked out rice cakes is not what we're going for. Okay so while the rice cakes are at the spa
For gochujang I'm using the spicy version because I need a little spice in my life
but you can also use the mild version if your life is spicy enough.
Add garlic, soy sauce, Korean chili flakes which are mild, brown sugar, honey, and sesame oil.
As always the ingredient amounts are in the blog post and I'll drop that in the description below.
Don't worry I got you. Mix up that sauce well until it's thick and beautiful just like you.
Now for the base of the broth. Dashi broth is typically used and it's made of dried kelp and
dried fish but those are a little harder for me to find and I rarely use them in other dishes so
I'm using this bonito soup stock. It's a much easier and convenient way to create dashi broth
and it has a long shelf life kind of like using chicken bouillon. So you can sprinkle it in in
other dishes too if you want to give it a little oomph of flavor. But for this tteokbokki recipe
all we need to do is mix it with water to create the broth. Add it to a large pan and mix it with
the gochujang sauce and then bring it to a boil. Add in the drained rice cakes and simmer on medium
heat for 10 to 15 minutes or until they're chewy and tender. Remember to stir them frequently so
they don't get stuck to the bottom of the pan. Once the rice cakes are soft and chewy and the
sauce is thickened just like you like, drop the heat to low and add freshly shredded mozzarella
cheese then cover with a lid. Girl I already hear you through the screen. I know freshly grated
cheese is more work but it's absolutely worth it. If you want that glorious cheese pull, grate your
own cheese girl. It only takes an extra minute or two and for the easiest grating, grate it while
it's still cold from the fridge or pop the cheese in the freezer for a few minutes. Cold hard cheese
is easier to grate than warm soft cheese. If you're feeling fancy, top it with green onions.
Look at this cheese pull. What's your favorite K-drama? I'm a newbie and I need your help with
Rex so we can watch and eat together. Let me know in the comments. The full recipe is on MikaEats.com. Enjoy!
