First up, we're making peaches and cream popsicles. So for these, you'll need four large peaches,
a half a cup of orange juice, one cup of milk or cream or a mixture of both,
and a half a teaspoon of vanilla. These recipes are so easy, so they don't have that many
instructions. The only labor really involved in this one is juicing the oranges and slicing
the peaches, so that's what we're gonna do. Add all of the ingredients to a blender and
blend until smooth. I found all the popsicle molds used in this video from Marshall's.
These ones in particular are adorable and the perfect peach creamsicle vessel.
For the popsicles, you'll need one cup of raspberries, three cups of frozen mango,
one and a half cups of coconut milk, and six tablespoons of maple syrup. For the topping,
I used some white and dark chocolate, a teaspoon of coconut oil, and some shredded coconut.
The raspberry and mango mixture are separate, so first start by blending together the raspberries
and one tablespoon of maple syrup and set aside. Then blend together the mango,
coconut milk, and remaining five tablespoons of maple syrup.
Alternately adding the mango mixture and the raspberry mixture until all the molds are filled.
Freeze overnight, then remove from the molds and place on a tray lined with parchment paper
to freeze for another 10 minutes, during which time you can melt the chocolate with the coconut
oil for 30 second intervals in the microwave. I dipped them halfway diagonally into the chocolate
and quickly sprinkled with the coconut flakes because these do harden really fast.
To make key lime pie in popsicle form, you'll need one and a half cups of greek yogurt,
a half cup of eagle brand, two teaspoons of lime zest, and a third cup of key lime juice,
one third cup of crushed graham crackers, and two tablespoons of melted butter. The first thing we
need to do is crush the graham crackers, so you can do that like I'm doing here by putting them in
a bag and whacking them with a rolling pin, or you can pulse them in a food processor. Stir in the
melted butter and set aside. Then in a large bowl, use a hand mixer to combine the greek yogurt,
eagle brand, lime zest, and key lime juice. And I've just been transferring all of the
mixtures into this pitcher because it makes pouring them into the molds easier. Fill the
molds up three-fourths of the way with the key lime mixture, then top with the graham cracker
crust and gently press down. These are so refreshing and they're hydrating. All you'll
need are three cups of cubed watermelon, a cup of frozen strawberries, and the zest and juice from
one lime. It goes without saying at this point, but just blend everything together, fill up your
molds, and freeze overnight.
