If you are looking for a way to add a little Japanese flavor to your Christmas lunch,
do not look for more than these delicious roasted chicken thighs in Japanese style with a yuzu-infused glaze.
First, dry the surface of the chicken thighs with kitchen paper.
Turn them over and then cut along the central bone on both sides.
And open them.
You will also have to cut the joint in the center to separate it.
In fact, they have already been cut because this is a popular way to prepare thigh quarters in Japan.
So, unfortunately, this time I could not show you the procedure.
Then, we will insert the side of the pulp with a fork from everywhere.
This will not only tenderize the meat, but will also help to absorb the marinade, which is what we will do later.
Put the chicken in a large diplo-back and then put it in a bowl to keep it in a vertical position.
Season it with a pinch of salt and pepper.
Then add two tablespoons of soy sauce, one and a half tablespoons of sake, one tablespoon of mirin,
then the bark and the juice of a whole yuzu.
Yuzu actually has very large seeds and little juice compared to other citrus fruits.
So if you can't find fresh yuzu where you live,
I suggest you replace it with about a tablespoon of juice in a bottle and some orange zest for a similar aromatic profile.
Massage the back to help combine the ingredients of the marinade and completely cover the chicken.
Then seal the back and let it rest in the refrigerator for at least 30 minutes, an hour if you have time.
Avoid marinating it for too long because this can actually make the flavor too intense.
Once ready, preheat the oven to 200 ° C, which is 392 F.
Cover the oven pan with baking paper and remove the chicken thighs from the marinade and place them on the pan with the skin facing up.
Put them on the bottom or center rack for 18 minutes.
While we wait, we will make an ice cream with the advanced marinade.
Pour it into a small saucepan and add half a tablespoon of sugar.
Heat over medium-low heat and stir continuously until it becomes a little glossy and slightly dense.
By hitting it in this way, it will then brush more evenly on the chicken.
After 18 minutes, remove the chicken from the oven and brush it with the ice cream.
You may have heard of the new tradition in Japan, where people enjoy KFC as part of their Christmas celebrations.
It is true, many families actually book a bucket for Christmas.
But another popular dish during the holidays is the roasted chicken made with thigh quarters.
However, this is not the usual roasted chicken, it is glazed with soy sauce which gives a unique aromatic profile similar to Japanese teriyaki.
To refresh this Christmas chicken and infuse it with an even more festive spirit, I incorporated it in the recipe.
The scented citrus fruits add a fresh and spicy note that magnificently completes the flavored soy ice cream, creating a dish that is really the best of the best.
The soy sauce and sugar burn quite quickly, so put it back in the oven on the top shelf for just a minute.
After a minute, brush it again with the ice cream.
As you can see, this is the perfect amount for two large thighs of chicken and put it back in the oven for another minute.
And that's all. Delicious roasted chicken thigh quarters in Japanese style with a festive teriyaki ice cream infused with yuzu.
