Are you looking for the easiest weeknight dinner?
This rich and creamy cottage cheese pasta
is going to blow you away.
It tastes like Alfredo,
but it is like a million times easier and healthier.
Hey guys, I'm Nicki Sizemore.
Welcome to my kitchen.
Welcome back to my channel.
Today we are making a cottage cheese Alfredo pasta.
It's kind of a game changer.
The sauce is made with just two ingredients.
So easy to make.
The entire dinner comes together
in the time it takes to boil a pot of water.
I can't wait to get started.

So the first ingredient for the sauce
is just a small garlic clove.
And I'm adding this to a mini food processor,
or you could use a regular size food processor.
Chop that up until it is nice and finely chopped.
And then we're going to add some cottage cheese.
I think cottage cheese is such an overlooked ingredient.
I grew up in the Midwest eating it as a snack.
It's such an awesome ingredient when baking or cooking
because it's so light.
It's packed with protein.
So I put it in a healthy veggie breakfast strata.
I put it in a veggie dip.
Oh my gosh, I make waffles with it.
I will link to all of those recipes below.
We got to bring cottage cheese back.
I love it.
So we're going to add that in
and season this with salt and pepper.
By the way, I'm just using a plain cottage cheese,
but you could use a flavored,
like there's cottage cheese with chive.
That's really good in this recipe.
Season this with some salt and pepper.
And then we're just going to process this until smooth.
All right, you guys, that's it.
That's the pasta sauce.
Took seconds to make.
You can see how luxurious and creamy it is.
You want to transfer this to a large heatproof bowl
because we're going to add the hot pasta
directly to this creamy cottage cheese mixture.
On that note, I forgot to mention
that I do have a large pot of water
coming to a boil behind me.
I'm going to season my pasta water with some salt.
And then I have one pound of spaghetti.
I'm using a gluten-free spaghetti.
You can use a regular spaghetti, a whole wheat spaghetti,
whatever you and your family like.
It's always important to give your pasta a stir
right when it hits the water.
This is going to prevent it from sticking.
Now this is a really important step.
Two minutes before the pasta is done cooking,
scoop out about a half cup to a cup
of the pasta cooking water.
And we're going to add a cup of frozen peas.
Or you can use fresh peas or even finely chopped broccoli.
Let's check the pasta.
Mm, perfectly cooked.
Still got a little bit of chew.
The peas are done.
Just going to give it a drain.
Now you want to dump that steaming hot pasta
right into the bowl with the cottage cheese sauce.
I like to season it at this point too.
That way it really absorbs into the pasta.
A little bit of salt and pepper.
All right, smells good.
I can smell that garlic.
And we're just going to toss this
until it's really smooth and creamy.
Now here's where that pasta cooking water
is going to come into play.
We're going to add a few splashes of this.
And this is going to help make that sauce
really smooth and creamy so that it evenly coats the pasta.
One last ingredient.
I have a half cup of grated Parmesan cheese.
It's creamy.
You got all that grated cheese in there.
I mean, tell me you don't want to dive into this bowl.
Throw a green salad alongside
and this is just one of the best dinners.
All right, I think it's time to serve myself a bowl.
I like to finish it with a bit more Parmesan cheese.
In my family, you can never have too much Parmesan cheese.
And then some freshly chopped chives or parsley.
I love the flavor of chives with this.
Just for a little bit of color
and a little bit of that onion bite.
All right, let's give it a taste.
You've got that creaminess, the sweet peas,
all that Parmesan.
You guys, this is so satisfying
and it is so much healthier than Alfredo sauce.
I'm going to keep eating.
I hope you guys give this recipe a try.
