Resep Udang Lapis Ham Keju (10 pcs)
Bahan:
10 pcs udang, kupas sisa buntut
Smoked beef / bacon / ham
Anchor Cheddar Cheese Slices
Daun bawang cung, potong seukuran udang
Bahan adonan:
200 gr paha ayam fillet dengan kulit, cincang
200 gr udang, cincang kasar
2-3 buah jamur shitake, rendam air hangat
1 sdt garam
1 sdm gula
1 sdt kaldu bubuk
¼ sdt merica
1-2 sdm maizena
4 siung bawang putih, haluskan
1 sdm air jahe
½ butir putih telur
1 sdt minyak wijen
Pelapis:
2 butir telur, kocok
Maizena
Bahan saus mentega:
2 sdm kecap inggris
1 sdm kecap asin
2 sdm arak masak, opsional
65 gr Anchor Unsalted Butter
½ sdm gula pasir
Langkah:
1. Di dalam mangkuk, campurkan ayam, udang, garam, merica, kaldu bubuk dan gula, aduk hingga lengket selama 5-8 menit
2. Peras jamur shitake yang telah direndam lalu cincang dan masukkan ke dalam adonan
3. Masukkan bawang putih, air jahe, putih telur, minyak wijen, dan maizena, aduk rata
4. Belah dua anchor cheddar cheese slices dan smoked beef lalu sayat bagian bawang udang
5. Susun smoked beef, keju, udang dan daun bawang lalu gulung
6. Bungkus udang dengan adonan lalu beri sedikit taburan maizena, ratakan sambil dibentuk
7. Celupkan udang ke dalam telur lalu ke dalam maizena lalu goreng di api sedang hingga sedikit kekuningan, tiriskan dan diamkan beberapa saat
8. Goreng kembali udang dengan minyak panas selama 30 detik, tiriskan
9. Untuk saus, campurkan kecap inggris, kecap asin, arak masak dan gula, aduk rata
10. Panaskan wajan, masukkan anchor unsalted butter lalu tuang campuran saus, masak beberapa saat lalu pindahkan ke dalam mangkuk
11. Udang lapis ham keju siap disajikan dengan saus mentega sebagai pelengkap

Ham & Cheese Shrimp Roll Recipe (yield 10 pieces)
Ingredients:
10 pc shrimp, peeled, tail intact
Smoked beef / bacon / ham
Anchor Cheddar Cheese Slices
Spring onion, sliced in the size of the shrimp
Dough ingredients:
200 g chicken thigh fillet with skin, chopped
200 g shrimp, roughly chopped
2-3 pc shitake mushroom, soaked in warm water
1 tsp salt
1 tbsp sugar
1 tsp stock powder
¼ tsp pepper
1-2 tbsp cornstarch
4 clove garlic, minced
1 tbsp ginger liquid
½ pc egg white
1 tsp sesame oil
Coating:
2 pc egg, whisked
Cornstarch
Soy Butter Sauce ingredients:
2 tbsp Worcestershire sauce
1 tbsp soy sauce
2 tbsp cooking wine, optional
65 g Anchor Unsalted Butter
½ tbsp sugar
Steps:
1. In a bowl, mix chicken, shrimp, salt, pepper, stock powder, and sugar. Stir until sticky for 5-8 minutes.
2. Squeeze the soaked Shiitake. Chop and add into the dough.
3. Add garlic, ginger water, egg white, sesame oil, and cornstarch. Mix evenly.
4. Halve the Anchor Cheddar Cheese Slices and smoked beef. Slice the bottom of the shrimp.
5. Stack the smoked beef, cheese, shrimp, and green onions, then roll.
6. Wrap the shrimp with the dough. Coat it with cornstarch and wrap it evenly while shaping.
7. Dip the shrimp into the egg, then coat with cornstarch. Fry on medium heat until slightly yellowed. Set aside and let cool.
8. Fry the shrimp once more in hot oil for 30 seconds. Set aside.
9. For the sauce, combine Worcestershire sauce, soy sauce, cooking wine, and sugar.
10. Heat the pan. Add Anchor Unsalted Butter and the sauce mix. Cook for a moment, then transfer to a bowl.
11. Ham & Cheese Shrimp Roll is ready to serve with Soy Butter Sauce on the side.
