Today, I'm meal prepping some high protein, low carb meals,
but we're not going to spend all day in the kitchen.
I mean, heck, we're not even going to spend an hour
because these are only going to take us around 10 minutes each
to prepare with the help of some shortcuts.
My shortcuts all come from this Thrive Market box.
Thrive Market is my go-to spot to shop for low carb ingredients.
They make eating healthy so easy, convenient, and affordable
since it's an online-based grocery store
where I can shop for thousands of best-selling organic foods
and natural products that are priced below retail prices.
Like this pasta, I save over $3 a box
when I purchase it through Thrive Market.
But if I happen to find a better price elsewhere,
they're going to match it.
They carry so many keto, low carb friendly products
from sauces to noodles to rice.
And these make the perfect shortcut ingredients
to help me make meals fast.
Like these enchilada sauces and taco seasonings.
I'm going to use these to make a simple chicken enchilada bake.
And this almond sauce and sweet chili sauce,
I want to use these for a spring roll recipe.
When I go to make an order, I filter the products
either by lifestyle, product type,
or just plug in my favorite brand.
Thrive Market makes it so simple to find products
that fit my low carb lifestyle.
And it's not just dry goods.
They also carry supplements, cleaning supplies, housewares.
Like I picked up these leak-proof meal prep containers
that I'm going to use later.
They have a monthly membership option for $12 a month,
or you can do what I do, which is the yearly membership
for 59.95, which comes to around $5 a month.
With the money saved in orders,
you're going to make back your annual membership fee
and savings.
And if you don't, Thrive Market
will credit you the difference.
This order, I saved $61.
So I've already made back my membership costs and savings.

In addition to my 30% discount,
Thrive is running a friends and family sale
through April 24th, making it a great time to sign up.
I was so excited when I saw
that Thrive carried these wraps made out of carrots.
I knew immediately I wanted to make some spring rolls.
Traditional spring rolls are held together using rice paper,
so it's not very keto friendly.
Each of these carrot wraps has only three net carbs.
And like I mentioned earlier,
I picked up a few dipping sauces
to go with these spring rolls.
This almond butter sauce and a sweet chili sauce.
Both are only one gram of carb per tablespoon,
but I did want to try making my own dipping sauce
for these spring rolls using almond butter.
Plus, if you want to try this recipe,
but you don't want to buy the sauce,
you can still make it
because you can make your own dipping sauce.
Add about a tablespoon of almond butter,
a couple teaspoons of lime juice and soy sauce,
or you can use tamari or liquid aminos,
and a pinch of red pepper flakes.
Whisk that together.
And this turned out a little bit too almond buttery,
so I added a splash more of lime juice,
and that was perfect.
Now for the rolls.
These carrot wraps are very interesting.
They remind me of scrapbooking paper
or maybe a fruit roll-up.
Just peel off the wrap and discard the film.
These are very sturdy,
which will be perfect for rolling.
They shouldn't tear at all.
For the filling, I'm using spring mix,
fresh cucumbers that I'm cutting into matchstick slices.
These smell so good.
I love it when cucumber's fresh
and it smells like cucumber.
A little bit of avocado for some healthy fats.
More carrot, but only for color.
I like my food to look good and appetizing,
plus a little bit of carrot never killed anyone,
at least I think.
For some flavor, a few sprigs of cilantro,
and then mint leaves are really good in spring rolls.
For the protein, I'm adding shrimp.
This is cooked and peeled shrimp
that I got from the grocery store.
It was actually a small shrimp cocktail kit,
but I didn't want to have to thaw out shrimp,
and I really didn't need a whole pound of it.
I just wanted a little bit
just to make a few spring rolls.
Slice it in half so we aren't eating huge chunks of shrimp
and so that they roll easily.
Then let's attempt to roll this.
It's kind of like rolling a burrito.
Actually, I have no idea how to roll a spring roll.
I'm not a trained chef.
I just play one on TV.
Use some water to seal it shut,
and then let's see how we did.
Look at how pretty that is.
And they hold it together too.
Trying it with the sauce.
The carrot wrap gives a slight sweet flavor to the spring rolls.
It's such a great replacement for spring roll wrappers.
I tried the other sauces,
and the sweet chili sauce was my absolute favorite
to dip these rolls in.
And I must say that I have been obsessed
with these spring rolls since I found these wraps.
I'm so glad to finally find a decent replacement
to make a low-carb spring roll.
That's easy to make too,
so I don't have to make up my own wrapper.
The next meal I'm going to make in under 10 minutes
is a cheesy chicken enchilada bake.
I like color in my food,
so I had to go with rainbow colors for veggies.
You can stick with green bell pepper if you want,
but the other colors do provide additional nutrients
that green bell peppers don't have,
like beta carotene and more vitamin C.
So I usually like to eat the rainbow when I can.
For the chicken, I have around 24 ounces of chicken thighs
left over from a big pack.
We don't really care for the flavor of the chicken fat,
so I like to trim off as much as possible.
Chicken breasts or thighs can be used here,
just as long as you're making sure
you're cutting your chicken into thin strips or chunks.
Then over a skillet preheated to medium-high heat,
add a few glugs of avocado oil and drop in the chicken.
Once that chicken was evenly seared on the outside,
I added some taco seasoning that I got from Thrive Market.
Some of the seasoning packets
that you can get at the grocery store
can have dodgy ingredients in them,
but this one just has the spices,
and it uses rice flour as a thickener,
so it's gluten-free.
I do have a recipe for keto taco seasoning on my website
that is the perfect blend of spices.
Just Google keto-focused taco seasoning to get that recipe.
Once the veggies have softened,
it's time to add some enchilada sauce.
I picked up two different types to try,
so I'm gonna go with this brand
since it's lower in carbs than the other.
This recipe I'll divide into four servings,
so I'll add about a cup of enchilada sauce.
That's only gonna add around two net carbs per serving.
While I give that a few minutes to marinate
into the veggies and the chicken,
I'm gonna get my meal prep dishes ready.
I picked up these from Thrive.
It says they're leak-proof,
and I like how they stack, too.
They are the perfect size,
plus they're oven-safe and air fryer-safe.
Not microwave-safe, though.
Now that the enchilada sauce is done cooking,
I'll divide it into each container ever so gracefully,
then top it with some cheese.
Normally, I like to shred cheese from the block,
but these are Lazy Girl recipes,
so I'm just gonna use bagged cheese.
And I had to test to see if these were truly leak-proof.
They are.
These will stack nicely in the refrigerator,
and when I wanna have one,
I just pull it out and pop it in the air fryer uncovered
and cook it at around 350 for three to four minutes,
just until the cheese is bubbly and it's cooked through.
Next up is a low-carb pasta dish.
I usually like to make a lot of pasta
because it's just so easy to do,
and it's perfect for busy nights.
I start by cutting off a pound of ground beef
and brown that in the skillet while I work on the pasta.
My favorite pasta lately is this brand,
and like I said, you can get it for a good deal at Thrive.
This pasta cooks and tastes just like regular pasta,
but it's made from lupin beans instead of wheat flour,
so it's gluten-free.
It's also packed with protein,
and it's low-carb because lupin beans have a lot of protein,
and they're very fibrous.
They come in different shapes too,
and I thought this shape was fun.
I'm only making two servings,
so I just cooked up about half of a box.
For the seasonings on the beef,
I'm adding my go-to Italian seasonings,
which are Italian seasoning, garlic powder,
and my go-to secret ingredient
to make the best low-carb marinara sauce,
which is anise seed.
I always wanna say anise seed,
but I don't think that's right.
I'm using the Thrive Market brand of marinara sauce.
It's a low-carb, plus it doesn't contain any added sugars.
Each half-cup serving is around four net carbs.
One good thing about this lupin pasta
is that it doesn't take very long to cook
compared to traditional pastas.
Make sure you follow the instructions on the box, though,
because if you cook it any longer than they say,
the pasta shapes tend to break and crumble,
and you're gonna get mad at me
when you should be angry at yourself
for not paying attention or following directions.
Pasta is one of my go-to meals
that I make every week
because it's one of those recipes
that don't require a lot of thinking
about recipe steps, ingredients,
or precise measuring of ingredients.
Since it takes around 10 minutes to make,
it's the perfect meal to make
when you don't have a lot of time.
