Good morning everyone, welcome to my channel Season 2 on SingChina.
Yesterday I have moved from Jianshui to Shiping.
Both cities are actually similar. Both have a very beautiful historical area.
Both are famous for its tofu making industry. Yet Jianshui is more developed, more touristic,
while Shiping is less known, less touristic, and also more nostalgic.
And plus, Shiping produces the best tofu in Yunnan province.
I have seen the traditional tofu making process in Jianshui.
They use water from the well, and then they press the tofu cube with hands.
But in Shiping, it's really hard to find a single small tofu factory in an old town.
There used to be a lot. And this was because Shiping tofu was so famous, and now it's in
high demand. The government now has moved all the small factories into an industrialized park
for mass production.
Although I didn't see tofu making, I found a place where they make tofu skin on the spot.
So yesterday, when I accidentally passed by this restaurant,
they offered me some soy milk and tofu free, and they are making tofu skin on the spot.
I think I've definitely ordered too much, more than what I can eat.
But I've got, firstly, this is tofu curd, and there are some sauces, and this is shredded pork.
And I also got fresh tofu skin, comes with a dip.
This is the tofu skin without any seasoning.
It is slightly sweet, slightly savory, and it has a very strong soybean taste.
But the most common way is to eat it with this seasoning, this dip.
It's savory, spicy, and salty.
This part of the street is way more authentic.
Look at those stones, they are shiny.
So those are the stones that was paved many, many years ago.
This is a historical part.
Shikun was also listed as China's national historical town.
Wow, those buildings are beautiful.
But I think this is a, this might be a private house.
Yeah, it is.
It's a dead end.
I particularly like this part of the old city because it feels so authentic and nostalgic.
And those lovely houses, they are not very high, but you can see all those plants, vegetables,
flowers.
Wow, this is insane.
Ew, I've never seen such a big lingzhi.
And this shop sells all kinds of traditional alternative medicines.
There are countless historical buildings.
Oh, and this is an interesting plant.
Wow, what a beautiful flower.
Ah, and there is also the fruit.
Looks like a tomato.
Wow, this train station has an interesting history.
So if you look at the buildings, it has a French style.
And it's very close to Dianyue Tielu, which is Kunming Haifang Railway.
And that one was built by French people.
Because after China-French war, the French colonizer built Kunming Haifang Railway,
trying to control the traffic, trying to control the mineral resources in Yunnan.
And to get rid of the reliance on French-built railways,
Yunnan people, they tried to raise money.
And they built the railway from Mengzi to Shiping.
And that is this one.
But right now, this railway is only for tourist purpose.
What you are seeing right now on my right hand are those colorful decorations.
They are for funerals.
And this one too.
So in urban China, it's less like that.
But in small places, they used to offer those kind of beautiful decorations
as the condolences to the family who have lost their family members.
Hello.
He's wearing a beautiful hanfu,
traditional clothes that he used to wear hundreds, thousands of years ago.
There is even a shop where you can get dressed up.
Those are traditional Chinese clothes.
You can rent those beautiful clothes and take a photo.
Now we are entering a historical site, the Wenmiao in Shiping.
Wenmiao is a place where Confucius is worshipped.
Do you have ginger and garlic?
Where do you get the ginger?
From Shuangjiang.
Ma'am, I would like to ask you something.
Do you know how to get to the old north gate tofu factory that has a well?
This way?
Yes.
From there, there.
That's where the sheep are.
Go down.
Oh.
Go down.
Keep going down.
About 200 meters.
Yes, about 200 meters.
Thank you.
You're welcome.
Hello.
Can I go in and see the well?
Sure.
I want to see the old tofu factory.
Thank you.
You're welcome.
Do they still make tofu with the water here?
Yes, they do.
They all make tofu with water here?
Yes, they take the dirt out.
Oh, with this big bucket?
Yes, they take the dirt out.
This is the tofu factory.
You can still see some of the old equipment.
She's really kind that she let me in because now it's a private house.
So those are the places where they used to cook the soybean.
And then they take water from this well.
And it is said that the underground water in shipping is very high in minerals.
It is naturally acid.
And it's a natural compound that can turn the soybean milk into the curd.
And therefore, it has a natural taste.
This is the old tofu factory.
But still now, they are still using underground water from here.
So those are the big tanks.
They draw underground water from here.
They put it in a tank and transport it to the industrial park.
And as far as I know, there are many wells in the old city.
And they are all connected.
So the secret of shipping tofu is actually this underground water.
This is the local market, vegetable market.
And on the second floor, it's all different kinds of tofu.
So let's check what kind of tofu they have.
Those are the big ones.
Well, it's about half a meter.
And there are also smaller ones, cubic ones.
And those are the dried ones.
That's the most typical way of eating tofu.
You just grill them and you sit around one of the lower tables.
What kind of rice noodles do you have?
Cold rice noodles.
Then I'll have a bowl of cold rice noodles.
Just ordered a cold rice noodle.
And this family, they are having dinner together.
This family, they are so nice.
And they invited me to join them for dinner.
And they've got a lot on the table.
This is fried cheese.
Are you all from the same family?
Yes, we are all from the same family.
This is my husband's wife.
This is my husband's aunt.
Cold rice noodles.
Cold rice noodles are the specialty here.
You have to mix them first, right?
Yes, you have to mix them first.
Oh, mix them well.
Oh, there's also mint in it.
Yes.
Oh, this looks like red rice.
Red rice noodles.
Have a bun.
The bun over here, right?
Yes.
Crispy bun.
Yes.
It's delicious.
Have you ever been to that place in Menqiu?
Have you ever been to Changyin Street?
Yes.
What is Changyin Street?
It's a street.
It's all like this.
That's Changjin Banquet.
Yes.
I've been there many years ago.
That place is in Yuanyang.
Yuanyang, yes.
Yes, in Yuanyang.
And Lvchun.
There's a place in Lvchun.
Yes, there's a place in Lvchun.
Yes, yes, yes.
It's over there in Hanyi group.
We're here for the neighbors' meal.
Sometimes they give us bad wine.
What do you want to eat?
I don't want it.
The neighbors are all neighbors.
Oh, they eat together.
They eat like this every day.
I'm from Anhui.
What is Anhui?
Anhui is a province.
Oh, it's so cute.
My son.
It was so nice them to invite me for dinner.
And what's interesting is while we are eating,
the neighbor came from time to time.
And they brought food.
They stopped for a drink.
It was so nice.
I've just rented a bike.
And I am going for a bike ride along the lake.
So it's only 30 yuan for five or six hours.
And the shop owner, he's very nice.
He didn't even ask for the deposit.
Oh, no one eats it, right?
Wow, it's so beautiful here.
It's very comfortable to live here.
Yeah.
Harvesting potatoes.
That's the ingredient.
This is Sichuan pepper, chili flake, MSG, salt, chili again.
And this is garlic.
And here it's soy sauce.
I think this is garlic with water, coriander.
And this is oil.
Tofu itself is very bland.
But they use 10 different kinds of spices.
And that's why it's so flavorful.
I came here because this papaya tree is huge and old.
Look.
Oh.
I think this wine is still good.
Wow.
I'm so happy.
I love picking fruit.
Wow, look.
This made my day.
I just pick one up from the ground.
So I don't think this is illegal.
I have always loved rural China.
Because it's quiet.
It's chill.
And people are quite friendly.
I still have another 20 kilometers to cover before I finally reach my hotel.
So I'm going to say goodbye to you all.
Thanks for watching.
And if you like it, please give me a thumb up.
And see you next time.
