We've got another one of our Disney favourites today in the form of these loaded totchos.
We've got lovely little crispy hash brown bites
topped with a slightly spicy chilli and all the toppings.
So we're going to start off by making a batch of my quick Tex-Mex inspired chilli
so let's get cooking. We're going to start by frying off 500 grams which is
about 1.1 pounds of minced beef along with a quarter of a
teaspoon of salt and half a teaspoon of black pepper.
Fry that for about five minutes until the beef is browned,
breaking up any large bits as you cook the beef.
Now we're going to add in a finely diced onion,
a finely diced red and yellow bell pepper and three minced cloves of garlic
and fry all that together for a further five minutes, stirring often.
So while that minced beef is frying with the onions and the peppers we're going
to cook the tater tots, they're also known as hash brown bites in the UK
and you should be able to find them in most major supermarkets.
If you can't find them then just replace them with fries instead it'll still
taste absolutely perfect. Now I'm going to cook these in the air
fryer but you can cook them in the oven if you prefer,
just following the pack instructions. Now coming back to the chilli we want to
add in three tablespoons of fajita seasoning mix,
a teaspoon of smoked paprika, a crumbled beef stock cube,
two tablespoons of hot pepper sauce and two tablespoons of tomato puree or
paste in the US. Cook for another two minutes stirring
continuously. Now add in a 400 gram or 14 ounce jar of
passata, a 400 gram or 14 ounce tin of drained
black beans, a teaspoon of light brown sugar and 120
ml or about half a cup of water. I use the water to swirl out the
passata jar and then pour it in for that extra flavour.
Stir everything together and bring to a simmer then turn down the heat
and cook for five to ten minutes stirring occasionally until slightly
thickened. Now those hash brown bites are ready and
the chilli is done we're going to arrange the hash brown bites on a tray.
I like to nestle in a little bowl of sour cream
and then we top with the chilli. Sprinkle on grated cheese and some spring onions
or scallions. I also like to crush up a few tortilla
chips and sprinkle those on too. And there you go that's my loaded chilli
totchos, just whack that down in front of the
family and you know they're going to dive straight in there.
I'll see you next time.
