Hi, welcome to Cook Stacey Cook. Today, we are making asparagus and shrimp fried rice.
We need some asparagus.
Chop them into small pieces and
chop some green onion.
Lightly beat 2 eggs.
I already thawed some shrimp in the fridge overnight.
I used some cornstarch to lightly rub the shrimp. Then rinse them with water a few times.
This is a great way to get rid of the freezer taste of
previously frozen shrimp.
Use kitchen towel to pat them dry.
This helps to give the shrimp a good sear in the pan for a boost in taste.
Chop the shrimp into small pieces.
Season them with some salt, sugar and some black pepper. And then we are ready to cook.
Medium-high heat. Add some oil.
Add the shrimp when the oil is hot.
Stir fry until the shrimp is fully cooked.
Set them aside.
Use the remaining oil to stir fry the asparagus.
Season with some salt.
Cook it to about 80% done.
Pour them into a bowl.
In the same pan, add a little bit more oil.
Stir fry the cold rice first.
This is leftover rice from the fridge.
Use the spatula to break up any chunks of rice.
Now we add some more oil in the middle and put in the egg.
Mix up the egg and the rice.
When I am using a flat pan, I like to use two spatulas.
It's easier to stir the rice this way.
Season with some salt.
When the egg is cooked, pour the shrimp and asparagus back in the pan.
Mix them well.
Season with some black pepper.
Add the green onion. Give it a few more stir and it's ready to serve.
