猪脚醋是客家人的传统菜肴,月子餐里必定会有这道美味又养生滋补的菜肴。做法和食材都不会很繁复。吃起来酸酸又甜甜的很开胃,又有胶原蛋白满满的猪脚,配饭吃简直是一流啊!当然传统菜肴每家每户都有属于自己独特的烹调方式,今天分享的猪脚醋做法是我外婆流传下来的,我们从小就吃着这个味道长大。

一般上猪脚醋是没有加白萝卜去烹制的,就我外婆觉得加了白萝卜一起就多一样东西吃而且也不会吃那么多肉容易腻。坐月子的话就别加入白萝卜哦,因为白萝卜性凉,脾胃虚寒、慢性胃炎、胃溃疡等人不宜食用哦。除此之外,有些人会加些辣椒干吃起来有点辣口也是开胃的。也有些人是加水煮蛋一起卤应该也会很好吃。

我们家一向来都有加入葡萄酒做菜,猪脚醋也不例外。猪脚没有焯水的步骤就倒入锅子里再加入葡萄酒和黑醋翻炒灼掉它的血水也帮助祛腥。其实,食材里的老姜,黑醋和酒都有祛腥的作用了。至于,坐月子的人在烹制这道料理的时候,使用麻油和老姜是最好不过了。祛风暖身功效是一流的。若怕上火的就改用食用油和嫩姜,味道也不会差太多,一样的好吃。

- 50克 冰糖
- 2汤匙 食用油/麻油
- 1汤匙 晒油
- 1茶匙 盐
- 适量清水
- 1根 白萝卜 (月子餐不放)
- 2汤匙 黑醋(爆香用)
- 2汤匙 葡萄干酒(爆香用)
- 2勺 黑醋 (可以自行调整)
- 2勺 葡萄干酒 (可以自行调整)

❤️小贴士
1. 如果没有葡萄酒可以加黄酒或花雕酒,任何你喜欢的酒也是没问题的。
2. 调味料的糖,醋和酒都可以随自己口味调整哦。

- 40g Old/Young Ginger
- 50g Rock Sugar
- 2 tbsp Cooking Oil/Sesame Oil
- 1 tbsp Dark Soy Sauce
- 1 tsp Salt
- Appropriate amount of water
- 1 White Radish (not for confinement)
- 2 tbsp Black Vinegar (for sauteing)
- 2 tbsp Raisin Wine (for sauteing)
- 2 scoops Black Vinegar (adjustable)
- 2 scoops Raisin Wine (adjustable)

❤️ Tips
1. If there is no raisin wine, you can add the rice wine or Huadiao wine, any wine you like is fine.
2. The sugar, vinegar, and wine of the seasoning can be adjusted according to your own taste.
