Slicing the fish for raw fish. It's alpacore tuna.
The piece here to be sliced. Alpacore tuna fillet. So I'm slicing it. Alpacore tuna flesh.
Some other ingredients are going to go in the raw fish. Tomatoes that we got from the bush garden
and the spring onions. We got from the bush garden also. So here's the fish after it has
been diced up. Now soaked or rinsed with seawater. This is seawater straight from the ocean.
We're going to soak the fish overnight in the seawater. Some people just use salt but
we prefer seawater because it just gives it the perfect blend of saltiness. Low seawater sometimes
it can be too salty. Sometimes not enough salt. And after it's been soaked in seawater the fish will
expand twice the size of the cubes and that's why we do that too. Freshens up the fish as well.
All the fish that we've soaked in seawater last night overnight in the chiller of the fridge.
And all our bottles of seawater over there that we got from the sea last night also.
Wow look at that fish. I'm not sure if you can tell in this video but the fish cubes definitely
have doubled in size in comparison to last night. So we just poured out the water from the seawater
from last night. Rinse it again with new seawater and this is the lime that we're going to add onto
it. Some people like to add the lime and marinate it in lime overnight also. That'll tend to like
cook up the fish a bit. Another rinsing. So one more rinse. I'll just take a taste.
That's beautiful already. This is the last and final rinse.
The seawater now pretty much kind of becoming clear. So now we have just poured it from the
pasta container into this container. We're going to mix them all up before we transfer it into
this up. Oh hi. Oh pretty. I'm gonna mix it all in here. Tomato, cucumber and spring onion.
That we had prepped last night. Now just adding all of that onto our fish.
Look at that. Pure coconut cream. There's still heaps left. Yes everything's mixed up together now.
And just the lime left that we want to add onto it. And then we will just chill it
in the cooler until it's ready to take out and serve and eaten.
Some lime now for that lime tangy flavor taste. Some people like to add the lime on
earlier on and let the fish soak with lime and seawater and leave it overnight. But that does
tend to firm up the fish a bit more. It kind of like cooks it to an extent. I like it both ways.
Either that way or just add on the the lime at this end stage. It all depends on taste. Some
people like it the other way where the fish is cooked by soaking it in lime. I prefer it both
ways. They both kind of taste a little bit different but still beautiful. Look at all the
seeds. So this now is a taste test. Beautiful. That's just heavenly. Can't wait to dig into it later on.
Here it is. A marinated raw fish and the fish is the albacore tuna.
You can use wahu for this or yellowfin tuna or any fish of your preference.
