Good morning, everyone. I'm Khoai. Welcome to Khoai Lang Thang channel
Today, I'm going to learn how to make pho
Actually, this pho restaurant is owned by this lady
I just come here to learn how to make pho
Now, I'm going to try my pho
Pour it in, right?
Try it
Pour it all in
How to spread the dough?
Don't be too much
Spread it out
Put it in
Why don't you spread it out?
The more you spread it out, the uglier it will be
What's wrong?
It's in my hand
It's like a cloud
That's it
Try your best
You can do it
But it's still spread out
It's spread out, but it's more difficult
I'm so lucky that I don't have to spread the dough
Good morning, everyone. I'm Khoai
Welcome to Khoai Lang Thang channel
Today, I'm in a very special place
It's in Quang Ba
It's about 10 km away from Quang Ba
This place is called Trang Kiem
The specialty here is Trang Kiem pho
Most people who pass by Quang Ba
They come here to eat this pho
This pho is special
My bowl of pho has been brought out
You can see a lot of scallions
A little bit of coriander
And a lot of chicken
The chicken skin is a little bit yellow
Because of the broth
They put a little bit of turmeric
I'll try the broth
The broth is a little bit yellow
Because of the chicken fat
And the turmeric in the broth
It smells like ginger
The broth is very sweet
The taste of chicken bones and pork bones
This pho is very special
They don't use a lot of herbs
In Hanoi or in the South
They only use ginger
They use ginger with broth
And chicken bones
And a little bit of herbs
To make it sweet
So the broth has a special taste
Compared to other places
I'll try the pho
The pho is quite big
It's a little bit soft
Mmm
The pho is very soft
And it's a little bit chewy
It's different from the pho we usually eat
Because the pho is very soft
So the pho they cut is also very thick
But it's not dry or hard
The pho here is cooked on the spot
You can see that the color of the pho is a little bit pink
Because it's made with red rice
Mixed with white rice
According to their special ratio
Then they will
Add a little bit of cold rice
And start to knead
And start to use that flour
To make the cake
Fresh right on the spot
The taste is different
And this pho is very soft
The pho board is also very big
Almost like the soft noodles
In the South
Especially here, they don't use beef
To cook pho
They only use chicken
The chicken is the specialty here
I'll put some chicken with the pho
And try it
The chicken on top is the thigh
The meat is more delicious and special than the chicken we usually eat
The skin is still a little bit crunchy and fatty
So they don't use beef
To cook pho
Because the chicken on top is a specialty
In this area, there is a market
About every Thursday
People will gather at the market
And sell a lot of pho
If you come to the market
It will be more fun
If not, you can go through Dong Van
And go through Quang Ba
You can come here to eat
One of the old pho shops here
4 generations have sold the special pho
Now I will focus on eating my pho
Then I will go straight to Dong Van
Bye
There is no traffic jam
It's like a rock that has just fallen from the sky
Oh, a lonely tree lying in the middle of the road
Dong Van, the North Pole of Vietnam
This place has suffered from attacks
From China to Vietnam in the 1980s
The place where water and land
Are far away
Recognized by UNESCO
As a World Heritage Park
I often call this place the soul of the rocky plateau
The rocks make Dong Van special
And it is the rocks that make life here
Different from the rest of Vietnam
There is no land
People are looking for a piece of land to put in the rocks
Sometimes it's enough to plant a corn tree
Or a cat tree
There is no land
No water
Which means there is no rice
So the only source of corn flour
Is the common poor rice
The rocks are not enough for the forest
Lack of firewood
So the dry elephant
Even corn is the only food
People can find here
Along the mountains
If you pay attention
You will see the dried corn
Always kept by the people as a precious firewood
The first person to welcome the potato
To the land of this rock is Mrs. Choe
And today
She will pick the potato
And the traditional sour soup of the Mong people
It's evening now
And I just changed into a new shirt
Take off the shirt to keep it warm
This is the corn flour that you have steamed
The corn flour is...
Then she will steam it twice
Mix it with water
Then we steam it for an hour
To make it soft
Can I eat it?
Yes, you can
This is the corn flour that you have ground
Let me turn on the light
Yes, let me see
Here, the light is on
Turn on the light
Here
This is the corn flour that you have ground
The corn flour is yellow
There are some ants that eat it
The yellow color is like butter
I like it
This is the corn flour that you have ground
You have ground it with the mortar, right?
Yes, we have ground it with the mortar
Yes
This is my mother-in-law's
The ants eat it
And the vegetables
We cook them all
But they are clean
Yes
So I have it at home
The Mong people didn't have this
The sticky corn is soft
And the soft corn is dry corn
When it is dry, the corn can be cooked
Mix it with water
Yes, we mix it with water
Mix it
too much water makes it sticky
This is the corn flour that you have steamed once
Normally, you have to make from this flour
and it takes many hours
We have to add water to the flour
We have to mix it like this
Then we have to spread it
If we don't spread it, it will be...
...it will be not delicious
So we have to spread it
We don't need to spread this anymore
We don't spread this anymore
We have to do this
A little bit more
It will be spread
Spread and then we...
...steam it
We have to wrap it like this
All of this
So it will be more delicious
Do you see it looks like green bean flour?
If we add too much water, it will not be delicious
It will be too thick, right?
Yes
Add less water
Then it will be delicious
But if we add too little, it will not be delicious
We have to add just enough water so it will be fresh
It will be fresh but it won't be mushy
Yes, it won't be mushy
Yes
If it is mushy, it won't be delicious
We have to wrap it like this
Do you see it?
She hangs corn all over the place
Under the corn
On this rack is also corn
All corn
Yes
There is also a full rack
Because here...
...hang all corn
...here is only mountain
So people can't do rice
They mostly grow corn
Yes
Therefore, Mien Mien is a very popular dish
and...
...it is used when there is no rice in the house
Yes
This rack is small so I have to...
...hang all corn here
Yes
Over there
From the back, front, all houses have it
This rack, she also has to hang all corn
Yes
Are you not afraid that it will be damaged?
No, we have to hang it to prevent the wind from blowing
Yes
If the wind blows, it won't be damaged
Yes
We have to pull it out to cook wine
If we pull it out, there is no place to hang
Is this corn?
This is corn
And this is sticky corn
Yes
Sticky corn
Yes
But it is still fresh
It is still fresh and soft
We have to dry it to cook wine
Do you usually eat fresh corn here?
Yes, but we have to dry it to boil
Yes
Now we can dry it
Oh, do you grow cat grass here?
Yes
Herbs
Yes
Herbs
This is the grass she grows
There is a dog
It is peeing over there
There is a dog
Kikiki
It is eating
It is a tailed dog
Why do I see a lot of people raise a tailed dog here?
But I don't see a dog with a tail
Everyone sells a tailed dog
When I go to the market, I see a lot of tailed dogs
If you buy a Kikiki, it will cost 2 million VND
2 million VND for this one?
Yes, 2 million VND
Yes
What does this dog look like?
Yes
This is a chicken egg
Oh, it is so kind
This dog has 4 eyes
2 white eyes up here
Ah, that's why it's eyes
Because it...
She is afraid that when she covers the lid, the water will flow back
and it will be partially cooked and partially raw
So when cooking, people usually open the lid like this
When the air is out, she will cover the lid
This is her very special steamer
There is water underneath
Up here
There is water underneath
And up here is the steamer for steaming
Now
Now it's steaming
Now she will cover the lid
When it's steaming, she will cover the lid
We stir it, right?
Now the pork belly is cooked, she will put it in the corner
We haven't opened the lid yet, so we just put it there?
Yes, just put it there
To make it steaming
She will put the pork fat in
Pork fat, but the fat on top is black pork fat
Black pork fat
The specialty here is black pork fat
Normally, people here just eat the fat instead of rice
And here, she will cook a few more steps
She will cook a little bit more to make it more delicious and special
Put the newly steamed fat out
Then stir it with the pork fat
Just a little bit
Too much?
She will stir it
It looks like...
Oh, now it's bubbling up
And add the egg
This chicken must be from your house
Yes, it's from my house
From your house
Then she will mix it
She just adds a little bit of salt
People here eat less spices
Just a little bit of salt
Because the mountain here doesn't grow many spices
In the Northwest, near Lao Cai and Dien Bien
People usually use joss sticks and palm leaves
In the mountainous areas
And here, the mountain is only for growing corn
Just for growing cat trees
There is no forest tree to grow corn
Ginger, chili, garlic
These are the spices that people here use a lot
Oh, it looks drier
And she adds the herbs
After adding the herbs, it has two colors, green and yellow
This is her special dish
Fragrant
There is a phone call
There is a little bit of...
...burnt corn powder on the surface
It's a little bit brown, looks like pepper
She will take the yam out
This yam is cooked from the yam milk
The yam juice is ground
Then cooked with cat tree
Then she will add a little bit of sour water
Sour water is the water of this yam soup from the day before
Then it will freeze into pieces like tofu
This is the water of the soup
It's almost the same as the dish of the Lao people
This is the sour water
It means that we save the water of this soup
2-3 days later, it will be sour, it will be fermented
Then we use it to cook
That's all
This is the herb that she grows up here
Herb of the smell of the boat
The smell of the boat, this yam is the smell of the boat
The yam and the Lao fish cake are the same, right?
Yes
I asked if I could eat Lao fish cake at the house of a Lao man
But they don't add sour water
Just cook with cat tree, it will freeze
This banana tree is planted with the yam
A mini garden of her up here
The bird said, guests come, guests come, guests come
Guests come, guests come
There
What?
250,000 vnd, 300,000 vnd at Phien market
She bought it in Ha Giang
Yes, Ha Giang
Bought it in Ha Giang
Yes
Then she put a little bit of thyme in
The brown color is cat tree
Actually, the taste of cat tree is very similar to the sour cat tree under me
It's not very different
Up here, people grow cat tree is the easiest, right?
We can also grow ...
It's also good to pay 1,000,000 vnd
We take the seed and rub it
Can we grow any other vegetables?
I see there is a bean
Goat
People also pick the leaves of Goat beans to cook lemon
The leaves are eaten with Dutch beans
I eat Dutch beans soup, it's also delicious
Boiled fish
Boiled fish is also similar
Boiled fish
And pickled garlic
It is also a dish
I see someone only eat with water
In the past, the old people did not know how to grow vegetables
They just went to the forest to eat
Because the soil is difficult to grow
This bamboo shoot, when she put the egg in, it will combine together, it will be flexible
Is it flexible?
Yes, it's flexible
Let me try the other one
The other one is probably fresher
It's fresher
It's fresher but easier to cut
I just eat and talk, but it's easy to cut
And this one is flexible, it has eggs, it's flexible, and it has fragrant vegetables
Yes, it's delicious
Eat bamboo shoot with pickled garlic
The bamboo shoot soup here is very delicious
Because there are a lot of catfruit
And the soup has a lot of sour water, so it will be sour
Like the soup that everyone often cooks, the soup of sour cabbage
But it has a very fragrant smell of tofu
Bamboo shoot soup is the milk of Goat beans and cooked together with catfruit
After that, everyone will add a little bit of sour water
The sour water is the water of the bamboo shoot soup that has been left for 1-2 days
Let it ferment, the milk of Goat beans will freeze
And it will form into a ball like tofu
It will be very dry if it is soft
So eating with bamboo shoot soup like this is very easy to eat
She put the basil leaves in the bamboo shoot soup
Fragrant
It is really reminiscent of the soup of sour cabbage that I often eat in the south of Dong Bang
It has the smell of bamboo shoot
The smell of bamboo shoot is the smell of the bamboo shoot
Normally, when I drink it, it will have a sweeter smell
The sweet smell is more intense
Now I'm going to say goodbye and take it home
I'm red-faced because I drank wine here
There is a pack of mouth to bring home
See you in the next episode
Now I'm going home
Thank you very much
Wow, do you see the clouds?
It's very close
It feels like I'm only going up about 10-20 meters and I can touch the clouds
If I go straight, I can see the clouds closer
Goodbye everyone, I'm Khoai
