Hello everyone, and welcome to another video and in today's video. I'd like to show you how to prepare
Saba not sure yaki which means
salted mackerel or grilled salted mackerel
so if you come down here, you can see I have one fillet of beautiful Norwegian mackerel and
I'm going to prepare this now with these
skewers
Okay, so first things first. We want to score
the fish if we don't score the fish
the
basically the skin will shrivel up when you grill it, so
just
lightly score like so
one side and
Do the same going this way?
Get a nice criss-cross action
Flip the fish over like so
Cut this into half
Next we're going to put this on skewers. Okay. This is um
These are Japanese skewers, but you can pretty much buy these anyway, so
Okay, first things first
So you want to put skewers like so?
to the other side
And you want to put this one on next?
And then the other two you're going to put in a v-shape like so
You basically you basically want to support the fish so that it doesn't fall off when it's cooking
So you want to get into a nice kind of?
Shape like that
The final skewer, so this is ready for cooking like so and then actually let me just get rid of this excess water
Because of the water there
You don't remove any water because
it's going to dilute the flavor and
And then next I'm going to season it with salt okay like so
Quite liberal with the salt
Okay, and next we're going to grill this fish, okay?
Okay, so we're going to grill this
This mackerel now just place it on the salamander like so
Okay
And this will take about
Probably about eight minutes four minutes on each side
Or should I say five minutes on this side and probably three minutes on the other side, okay?
Okay, this is this has been cooking for about five minutes now. You can see it's
Slightly brown on the belly side a nice bit of crispiness there. It's not overcooked at all. I can feel it's
Firming up slightly, but it's not too hard. I'm going to flip it over
This side is only going to take about three minutes
Okay
So so the mackerel has been cooking for three minutes now
and you can see it's nice and
Brown
Not cooked too much
It's I mean it's kind of firm, but there's still quite a bit of give there which means it's nice and juicy inside
Beautiful color on each side like that, so let's take it over to the plate
Let's remove these when you remove the skewers. Just give it a twist like that
Okay, if you want if you want to do that, and you just pulled it out you remove half of flesh off the fish
So and then pull as you twist
Again twist twist and pull
So chopsticks tell us my first
So
So that with some this is grated daikon radish or grated moody
Lemon and we just garnish with some parsley
There you have it
That is sub are no shioyaki
Translated that's just salted grilled salted mackerel, okay
So when you eat this you want to serve you want to eat some radish with the mackerel put some lemon on top and then
Put some soy sauce on the radish very nice
Okay, thanks for watching everyone, and if you've got any questions, please don't hesitate to leave some
