Hello everyone, today I'm going to make braised pork trotters with lemongrass and chili
To make this dish, I have prepared 800g of pork trotters
or you can use pork shank
and 500ml of coconut water
you can choose coconut water that is a bit bitter
so that the broth is a bit sweet
if the coconut water is too young, the broth will be sour
and 100g of lemongrass
for the lemongrass, I have cut the top part of the lemongrass
so that I can mince it later
and for the green part at the bottom, I have chopped it
and smashed it
so that I can mince the pork trotters later
and 3 non-spicy chili peppers
and lastly, garlic
I use 6-7 small cloves of garlic
First, I will boil a pot of water
then I will add the chopped lemongrass
and a little bit of salt
about 1.5 tablespoons
I forgot to turn on the camera when I added the salt
so I will add a little bit of salt
to make the broth a bit bland
then I will boil this part
to release the lemongrass oil
now I will turn off the stove
when you turn off the stove, add the pork trotters
and I will soak the pork trotters in hot water for about 10 minutes
then I will take it out
and during this time, I will mince the garlic, chili and lemongrass
I will mince 2 chili peppers
I will mince the rest of the pork trotters
I will put it in later to decorate
I have finished mincing this part
now I will take the pork trotters out
after taking it out, you put it in a basket to drain the water
now I will prepare the broth
I use 2 tablespoons of sugar
then stir the sugar evenly
to make it burn naturally brown
for the broth, you choose a pan or a pot to make it a bit thick
to make it easy to stir, it won't burn
this amount of broth is not enough
and I use it right away, I don't save it
so you stir it with a spoon
when you see it turns slightly brown
and the amount of white smoke is also relatively high
now I will add water
the amount of water you add is about 3-4 tablespoons
about 50ml water
continue to cook until it dissolves
my broth is still hot
now I will take it out, it won't stick to the pan
I take it out early so my pan won't stick
next is the seasoning to braise this pork trotters
after putting the pork trotters in the basket to drain the water
now I will pour it out and add the seasoning
add 1 tablespoon of fish sauce
and 1 tablespoon of cooking wine
1 tablespoon of sugar
MSG and MSG, I add a little bit of each
and keep the other half for later
1 tablespoon of chili sauce
1 tablespoon of minced chili
1 tablespoon of minced garlic
and 1 tablespoon of minced lemongrass
and now I will mix this up
and let it marinate for about 10-15 minutes
then I will take it to braise
after marinating for about 15 minutes
now I will prepare to braise
put about 1.5 tablespoons of cooking oil in the pan
add the rest of the minced garlic
I put it in here to fry until fragrant
then you fry this garlic until it turns yellow
I put the minced lemongrass in here
I put the minced lemongrass in, I keep about 1 tablespoon
to put it in later
then continue to fry this part
until it's fragrant, then I'll add the chili
if you add the chili too early, it will lose its color
it won't have a beautiful color anymore
when you add the chili, you mix it up evenly
now I will add all the minced pork
then I put it on low heat and mix it up
when the garlic, lemongrass and chili stick to the pork leg
now I will add the minced chili
and add 500ml of coconut milk
I put all the rest of the spices in here
then I don't remove this powder
if I remove it, the garlic and chili will be gone
I cook it slowly until the powder melts
if you cook it on low heat, it will be a little weaker than average
let it boil slowly
and this pork leg, you cook it for about 1 hour
when the water is reduced
if you like this pork leg to be crunchy
you don't need to add more water
just boil it down a little bit
if you like this pork leg to be soft
you can add more water
I will add about 300ml of water
to cook it until it's soft
then I continue to cook until the water is reduced
and during the time of cooking
sometimes it takes about 5-10 minutes
after the water is reduced
you can add the remaining minced lemongrass
if you add it like this, the smell of lemongrass will be fragrant
and add the chopped chili
this pork leg has absorbed all the spices
and I keep the water to make it a little bit thick
to eat with rice
so I turn off the stove and take it out
I will put these pork leg slices on a plate
or in a bowl
pork leg slices have less meat
mainly because it has a lot of tendons
so I braise it soft like this
I eat it with a soft, crunchy texture
I really like it
so my braised pork leg with lemongrass and chili is done
thank you for watching
goodbye and see you in the next videos
