Who says party food has to be complicated? For an impressive, versatile appetizer,
try these party pinwheels that are easy to prepare and can be made the night before.
We'll start by adding two 8-ounce packages of softened cream cheese to a mixing bowl,
along with one 1-ounce package of ranch dressing mix, and two minced green onions.
Not a fan of onions? No problem. Try chopped parsley or dill instead.
Stir this together and spread onto four 12-inch tortillas.
For fun, we're using one of each — flour, spinach, sun-dried tomato, and whole wheat.
To prevent the tortillas from tearing, have them at room temperature or microwave for 30 seconds.
Then, sprinkle a half cup of diced red bell pepper evenly among the tortillas,
following with a half cup of diced celery,
two ounces of chopped or sliced black olives, and a half cup of shredded cheddar cheese.
Now don't stop there! We're adding chopped sun-dried tomatoes, salami slices, and fresh
basil to one of the tortillas. To the other, we'll add shredded carrot, spinach, and turkey.
Try a number of your favorite fillings for a personal touch here.
Roll the tortillas tightly around the filling. We'll wrap them in foil so they stay together,
and refrigerate for two hours or overnight to set up.
Right before the party, remove the foil from the tortilla rolls, cut off the ends,
and cut into slices. Dip party pinwheels into tomato relish, ranch dip, or guacamole.
Sliced into larger pieces, they pack nicely into lunchboxes as well.
