The Carriage House Harvest Soup Starter Blend
¼ cup olive oil
2 celery stalks, chopped
1 onion, chopped
3 carrots, peeled and chopped
¼ c Red Lentils
¼ c Green Lentils
¼ c Yellow Split Peas
¼ c Green Split Peas
½ c Wild Rice
Vegetable Broth 32 oz ( you can add more water if needed)
Sea Salt
Freshly Ground Black Pepper
1 Ham Hock
2 dry bay leaves
Saute onions, celery and carrots in olive oil until soft and translucent. Add sea salt and pepper (season as you go). Add your lentils, peas and rice and mix with the vegetables. Add vegetable broth, ham hock and bay leaves and bring to a soft boil. Let simmer for about 25 minutes. Add salt and pepper and your own seasonings if you like!
