Do you guys ever have cravings for dim sum? Well, I do, so I thought I would show you how to make
dim sum style pork spare ribs. In Mandarin, we call this dish 排骨, and the bite-sized
riblets are marinated in a black bean sauce, making this super flavorful and delicious.
And while it only takes 30 minutes to marinate, you can actually marinate this the night before
and have dim sum style pork spare ribs ready for the next morning.
So here's what we'll need to get started. Start with half a pound of pork spare ribs.
I'm using spare rib tips cut into one-inch pieces.
Then put those into a bowl and add the ingredients for our marinade.
We'll need one tablespoon each of rice wine, cornstarch, and water.
Half a teaspoon of black beans or black bean garlic sauce.
One teaspoon each of cane sugar, sesame oil, and regular cooking oil.
Half a teaspoon of freshly grated ginger.
Quarter teaspoon of salt, and finally a dash or two of white pepper.
Mix the ingredients until well combined and let it marinate for at least 30 minutes.
When the marinade is almost ready, slice about half a jalapeno or red pepper
to give our spare ribs a bit of spiciness and a dash of color.
Add this to our marinade and mix well before transferring to small plates or bowls for steaming.
Now it's time to cook. Bring some water to a boil and steam the dish of spare ribs
for 30 to 45 minutes or until well done and the meat is tender.
After 30 to 45 minutes, your spare ribs are ready to serve hot with rice or other dim sum goodies.
So that's how you make my dim sum style spare ribs at home.
Once you get the marinade going, everything else is super easy.
Now if you're serving this dim sum style, I'd like to recommend some other recipes you might
be interested in like my green onion pancakes or even turnip cakes.
Or you can just serve this with a bowl of hot rice.
Either way, it's super easy to make and I'm sure you'll be surprised at how delicious
homemade spare ribs can taste.
