Hi and welcome to Spice and Pans.
Today we'll be cooking stir-fried soy sauce noodles with chicken
or otherwise known as chicken chow min or in some countries they call it chicken lo min.
So let's start cooking.
Now we're going to do a light marinade on our chicken. I have with me over here 300 grams of
boneless chicken leg which I've de-skinned. I've cut into small pieces like this. You can
use chicken fillet or chicken breast, no problem at all. Add in one tablespoon of light soy sauce,
half a teaspoon of salt, a few dashes of pepper, crushed white pepper.
Mix them up well. Add in half a tablespoon of corn flour or corn starch. Mix them up well.
The corn flour is actually to make the chicken more tender.
And now we'll add in one teaspoon of sesame oil.
Mix them up well again. We just need to marinate this for about 10 to 20 minutes
because they are sliced very thinly so they will absorb all the flavor easily.
I'll see you back in a while and show you how to prepare the sauce.
Now we'll prepare the sauce for the noodles. I have with me over here
220 milliliters of hot water. Add in one teaspoon of sugar,
one tablespoon of light soy sauce, one tablespoon of oyster sauce,
two tablespoons of dark soy sauce. Add in a few dashes of crushed white pepper.
Mix them up well. Make sure you melt the sugar and you add in one teaspoon of sesame oil.
Mix this up well and we'll fry the noodles with the sauce when the chicken is ready.
I'll see you back in a while. Now we're prepared to fry our noodles.
Heat up a pan or a wok. Add in a suitable amount of oil. Swirl the oil around.
We'll start by frying our chicken first. Put your chicken in.
Spread them out. Don't be eager to mix them up well first. We need to brown them a little bit.
Make sure that they have close contact with the pan or the wok that you're using.
I'm using medium heat over here. You just need to fry this for about a minute or so on one side.
When you see that the chicken has slightly browned like this, you'll toss it to the other side or you
can actually flip it to the other side and fry it on the other side.
This is when we'll add in our garlic. Four cloves of garlic, chopped. Mix them up well.
We'll add our noodles in once we can smell the fragrance from the garlic.
Really very aromatic. Very very beautiful. Nice smell coming off from the chicken
as well as the garlic. Now we'll add in our noodles. 420 grams of hokkien noodles or yellow
noodles. We just put them in. We'll mix them up well.
420 grams of hokkien noodles or yellow noodles. We just put them in. These are cooked noodles.
Just spread them out. Now if you can't get this, of course, you can use dried noodles but make sure
you actually blanch them first to soften them. We'll just fry them for a minute or two. Mix
them up really really well. When you're frying noodles, try to use a pair of chopsticks because
then your noodles will not break that easily. Now we'll add in our greens. I'll be adding in
100 grams of choy sum. You can use any greens that you like, no problem. Now we'll pour in our sauce.
Keep stirring them around.
Now in our part of the world, we call this chow mein or stir-fried noodles. In some part of the
world, they call this lo mein which is actually noodles with gravy but actually it should be
known as chow mein. We'll fry this until the sauce is almost dry and the noodles absorb the sauce and
this will be really really flavorful. The noodles are almost done. Just for a little while more.
Once the noodles are well coated with the sauce and you do not see any much of the
sauce left, it's time to serve our lunch. Now the dish is done, let's have a taste.
Wow, I love noodles. I really really do.
The noodles are full of flavor. The sauce really coats the noodles very very well. I'll try the chicken now.
Very very tender. So ladies and gentlemen, I hope you like our video.
