Valentine's Day just wouldn't be Valentine's Day without a little something sweet and
chocolatey.
But that doesn't mean you have to throw in the clean eating towel, because today I've
got a recipe that is as nutritious as it is delicious.
I'm Dani Spees and for this quick bite I'm making my avocado chocolate mousse.
Now I know what you're thinking.
How in the world are we going to make chocolate mousse out of an avocado?
Sounds crazy but it works and it's absolutely delicious.
First thing you want to do is scoop the flesh out of one avocado and get it into a food
processor.
Yes, it's true, avocados have a ton of fat, but these are the kind of fats we want to
be incorporating into our diets.
Those monounsaturated omega-3 fatty acids.
Good for the hair, good for the skin, good for the nails.
They taste great, they make you feel great, and they're good for you.
Once you've got the avocado in the processor, just give it a couple pulses to break it down
a little bit.
Now you want to be sure that you're using a nice ripe avocado and here's how you're
going to know that.
You're going to do the press test.
You're going to take your finger and gently push it into the skin of the avocado and it
should have a little bit of give.
Not too hard, not too soft.
This guy is perfect.
Next into the food processor goes a quarter cup of unsweetened cocoa powder, three tablespoons
of agave nectar.
This is going to sweeten without affecting blood sugar levels.
A half a teaspoon of vanilla extract.
Adding vanilla to chocolate actually intensifies the chocolate flavor.
A quarter teaspoon of kosher salt and a half a cup of unsweetened soy milk.
You could also use almond milk, coconut milk, any milk you had on hand.
Then you're going to pop the lid back on and start blending it all together.
Now you may just need to scrape the sides down a couple times.
Make sure nobody escapes.
Okay, once everything has come together, you are going to be left with this rich, decadent,
creamy chocolate mousse.
And from here, all you need to do is spoon it into two small serving dishes.
One avocado is going to give you two servings.
You're going to pop them in the fridge for a couple hours, let them chill and set up,
and then when you're ready for dessert, I like to top them with a little dollop of fresh
whipped cream and some berries.
So now that you've got yourself a Valentine's Day dessert that you can feel good about eating,
go make that somebody special extra happy this Valentine's Day.
