This is my absolute favorite minestrone to make
on a cold winter day.
Plus it's snow.
This is my favorite minestrone to make,
especially when it's cold outside like today
and it's also raining.
My favorite part.
Take crusty bread,
dip it,
heaven.
We're softening our carrots, celery, onion, and garlic.
And then you can kind of change the minestrone around.
You could add pasta to it if you want.
You could add potatoes to it.
You could add beans to it.
You could add a combo of all three of those things.
Let's see.
This is very meta.
This is gonna be a TikTok.
So we're live TikTok and we're shooting a video.
So anyway, we're gonna add the potato next.
So it's just one potato.
I did a smaller potato.
I actually did a russet potato
because I like that kind of heft of the russet potato.
Peeled it, diced it, and in it goes.
And I like to swirl every single layer.
So every time I add an ingredient,
I add a little bit of stuff.
You could add spinach.
You could add broccoli, I guess.
You could add any kind of Swiss chard you wanted.
Using actual tomatoes,
then I would just break them up
and cut them up with a pair of scissors.
I'm gonna add a little bit of chicken broth too.
About a cup or so of chicken broth.
You could also add more if you wanted
to make it really, really loose.
But remember that the potatoes can absorb a lot of liquid,
which is why we have to add that.
If I added conchita, then I would add beef broth
just to kind of balance out those flavors.
But since I didn't, I'm using some chicken broth.
You could use vegetable broth.
