Belgian waffles like you’ve never seen before: One celebrity chef has been taking savoury ingredients from his fine dining restaurant and using them to reimagine this Belgian street food staple. In the Galerie du roi shopping arcade in Brussels, Sébastien Mattagne is giving
the waffle a gourmet makeover. Sébastien Mattagne runs the business side of things but the recipes are the brainchild of his father: Michelin starred chef Yves Mattagne.

Since 2019 the Gaufres Waffles restaurant has been turning the traditional snack into
a proper meal, experimenting with unusual flavour combinations and trying to completely change the idea that people of have of the original sweet Brussels waffle.

In the kitchen, Gaufres & Waffles chef Lauren Herzfeld follows the classic waffle recipe
But the traditional approach stops there. Here waffles are topped with a three cheese espuma and truffle cream, Peking duck with foie gras, avocado and Thai dressing, Japanese yuzu sorbet alongside caramelized apple or beef tartare. The waffles cost up to 16 Euro.

The recipes are inspired by Mattagne’s world travels. With four locations in Brussels, the team hopes to keep experimenting with new culinary possibilities.
