Hey guys, how's it going?
Welcome back to my channel.
Today's video, I thought it would actually be really fun
if we did some meal ideas.
So I'm gonna be sharing with you five different lunch ideas,
things you can bring for lunch to work or to school,
or if you work from home, just to have for lunch.
And these are all actually vegetarian.
I think they're all vegan actually,
and super healthy and delicious.
So let's get cracking.
Okay, so meal number one,
we are gonna be making a quinoa salad.
Now I'm actually gonna be making this in bulk.
I made this two weeks ago, I wanna say, and it was so good.
So I'm gonna be making it again,
and I just find it easier to make something like this
in a giant container, and then you can scoop out
as you need it for lunch or dinner or as it comes.
So I'm gonna be doing this in a big portion.
You can obviously make it in a single portion
if that works better for you,
but we're gonna start off with that.
So for the big quinoa salad,
I have this already prepped here.
This was one and a quarter cups of quinoa
before it was cooked, so I'm not sure how much it is now.
So that's a good amount of quinoa.
Then I just chopped up very finely
a little bit of cilantro here.
I would say that's about a tablespoon.
And I have one full lime,
which I'm gonna be using the juice.
I have about a quarter of a red onion, one full tomato.
This is frozen corn with chopped jalapeno in it,
and I just fried that up on the frying pan really quick
to caramelize the corn a little bit,
give it some flavor with some fresh garlic as well.
And this is one can of black beans.
I'm gonna toss all of that in with the quinoa,
and it is so delicious.
And then I'm just gonna top it with fresh salt and pepper.
So that's the finished quinoa salad.
And like I mentioned, I do like to make this one in bulk
just because I find it easier to do so.
And this will last about a week or so
with Kyle and I both eating it.
So yeah, you can just grab a little portion
every time you need some.
And that is Monday's tasty little lunch.
So meal number two for Tuesday
is gonna be a good old fashioned chopped salad.
I personally love a chopped salad,
mainly because I find them not as messy as regular salads.
You know when you get that really huge piece of lettuce
and it's like flopping around
and you get dressing all over your face
and it's just never a good look.
So I personally love having like a finely chopped salad.
It's super easy to scoop and eat
and they're also really tasty.
So we're gonna be doing chopped salad for Tuesday.
So for this chopped salad,
I'm gonna be using a lot of greens.
So I have some fresh kale here.
I'm also gonna be using broccoli and some red onion,
probably not this much, that's a lot.
Some lentils here,
and then I'm also gonna top it with some hemp seeds.
Now for salads, I always like to give myself
a bigger portion to make sure that I'm full.
So I'm gonna be putting this into a bigger container
just to make sure that I have enough food for lunchtime.
And yeah, we are just gonna stuff that full
of all of this goodness.
So there we have it.
This is probably about a cup and a half
of finely chopped kale.
Then I did half of the head of broccoli
and how much is this?
Maybe a quarter of a cup of red onion.
Then I'm gonna toss in a quarter of a cup of lentils
as well as a tablespoon of the hemp seeds.
I'm just gonna add a little salt and pepper
to this bad boy.
And then what I like to do with a salad
is give it a good shake,
make sure everything's mixed up really well.
And I always like to bring my dressing on the side
because you don't want it to get soggy.
So for a salad like this,
I personally like a creamier style dressing,
but obviously you can do whatever you wanna do with it.
Onto Wednesday's meal, we are gonna be doing a wrap.
Now I personally love wraps
and I've been on a wrap craze lately.
I've had them for lunch like more often than not.
So when I used to work an office job,
if I brought a wrap,
I would just wrap it up in the morning,
but you can definitely just pack all the ingredients
separate and put it together at work
in case it gets soggy or whatever the case may be.
So totally up to you.
So for the wrap,
we're just gonna need a whole wheat tortilla.
Then I have here some roasted chickpeas
that I've already done up.
Basically it's just chickpeas with chili powder,
paprika, onion, and garlic powder.
Some pickle, some fresh spinach,
as well as a little bit of tomato.
And then I'm gonna be using just mustard for the condiment.
And there we have Wednesday's lunch.
So Thursday's lunch is going to be a delicious buddha bowl
and we are gonna just fill it with so much goodness.
All you're gonna need for the buddha bowl
is some spinach, some kale, half an avocado,
some red onion again, some tomato, lemon wedge,
a little bit of quinoa.
I'm gonna use the chickpeas again and a dollop of hummus.
So I'm just gonna start off
by chopping up the spinach and the kale.
And then I'm just gonna basically plop everything
into a bigger container.
Once again, I do like to use the bigger containers
for things like this,
just to make sure that I am getting enough food in there.
So that's what we are gonna do.
And there we have the buddha bowl.
Now something like this is also really tasty
with some balsamic or something like that
drizzled over top.
Last but not least for Friday,
we're gonna be doing an avocado toast,
also one of my favorite things.
Now this I would definitely recommend
just bringing the ingredients to work
and then cooking it up there.
If you don't have a toaster at work,
you could definitely just make this
into a delicious avocado sandwich.
So whatever works for you.
This is a hella tasty one
and we're treating ourselves
cause it's Friday.
Who doesn't like avocado?
For the avocado toast,
I have two pieces of toast here.
This is with just regular brown bread.
Then I'm using a full avocado.
I'm gonna put some hemp seeds on top as well.
And then I just have a little bit of chopped up tomato
and then we are gonna drizzle
some balsamic vinegar on top.
And that is the final avocado toast.
So that sums up my video today, you guys.
I really hope you enjoyed it
and hopefully it gave you some inspiration
on some things you can make for a healthier lunch.
And I'm really excited
because now I have a bunch of really good food
in the fridge.
So I'll see you guys in my next video.
Bye.
