
Homemade Pizza Cooked On A Stone

Pizza Dough
1-1/2 cups warm water (110 degrees F)
1 tsp. sugar
2-1/4 tsp. active dry yeast (7 grams)
1-1/2 tsp. salt
1/4 cup oil
3-1/2 cups all purpose flour (approx.)
Proof yeast with sugar in warm water about 10 minutes. Add salt, oil and 1-1/2 cups of flour until you have a thick batter. Add remaining flour in intervals until dough is easy to handle. Knead 8-10 minutes by hand (6-7 minutes in stand mixer) until smooth & elastic. Place in oiled bowl and cover with plastic. Proof in warm place 1-1/2 hours or until doubled in bulk.
Place pizza stone in cold oven and heat to 500 degrees F at least 20 minutes. Spread dough onto pizza peel generously dusted with flour & cornmeal. Make sure it can move easily by shaking it back & forth. Let rest 10 minutes, then place toppings. Keep checking that it can move freely. Leaving hot stone in oven, slide pizza onto it and bake 7-8 minutes at 500 degrees F. Remove from oven and allow to rest 5 minutes before slicing. Yields one 14" pizza.
* IF YOU DON'T HAVE A PIZZA STONE - After proofing, spread dough onto greased cookie sheet or pizza pan, rest 10 minutes, then top and bake in a preheated 350 degree F oven for 20-25 minutes.
