COURGETTE AND BROAD BEAN FRITTERS / FROM PLOT TO PLATE

Hi everyone and welcome to "From Plot to Plate", my new Youtube series where I'll be sharing all the things I cook with the fresh produce grown at my allotment plot in London.

Today's recipe is Courgette and Broad bean Fritters.

You can substitute the broad beans for peas if you prefer. You can also add fresh mint leaves to the mixture before frying, whatever you prefer!

They freeze really well, but I like to keep them in the fridge and eat within the next couple of days. They can be heated in a frying pan or in the microwave with ease!
