Hello, today we are making an easy and comforting tofu dish.
In this recipe, we are adding prawns, dried scallops and eggs to the tofu
with very minimal seasoning and we're going to use a simple stir-fry method to
cook this dish. First, let's get the ingredients ready.
I'm adding dried scallops to this recipe. If you don't have dried scallops, you can
add half a tablespoon of oyster sauce or
abalone sauce. Here I have 10 grams of dried scallops.
Rinse them clean, then soak them in 250 ml of water for 20 minutes.
Now let's prepare the prawns. Clean and devein the prawns.
I've got 120 grams of prawns here. You don't need to use big prawns, small ones
will do just fine. Slice them into small cubes and set them
aside. Prepare two egg whites. Some recipes use
whole eggs but using just egg whites makes the sauce smoother.
Oops, I've got a drop of egg yolk here but that's okay.
For this recipe, I'm using silken tofu. You can use any tofu but I find the
texture of silken tofu works really well with this recipe.
Snip off the edges and the tofu will release easily from the mold.
Cut them into small cubes, then set them aside.
Once the scallops have softened, remove the excess water.
Then pat it dry so that it won't splatter while cooking.
Then shred them into smaller pieces. Be sure to keep the water from the scallops.
Add one and a half teaspoon of potato starch to the water and mix well.
If you're not using dried scallops, add half a tablespoon
of oyster sauce or abalone sauce. Once all the ingredients are prepared, you
can start cooking the tofu dish. When the wok is hot, add the dried scallops.
Fry them on low heat until they turn golden brown.
Then add minced garlic and fry until fragrant.
Next, add the prawns. When the prawns turn pinkish orange,
add the potato starch mixture. Make sure to mix it well before adding.
If you want the soup to have more flavor, use chicken stock instead of water.
Now add the tofu. Season with salt or soy sauce and a bit of sugar.
When the water comes to a boil, reduce to lowest heat.
Slowly pour in the egg whites, gently swirling them as you pour.
When the egg whites turn whitish, the dish is done.
