Hello everyone, today I gonna show you super easy to make,
but cool looking pastry decoration.
Dehydrated milk crisps.
So let's do it.
So the recipe is very easy.
You want to mix 500ml of food fat milk and 50g of glucose.
But this is only basic recipe.
After that you can add some sweet spices like cinnamon,
star anise, vanilla etc.
So I mix milk, glucose and cinnamon inside the pot
and I'm gonna bring it to the 70 degrees celsius.
That is the best temperature for making the bubbles.
You don't want to make your mix
too cold or too hot because otherwise you're never gonna
be able to make proper bubbles.
I'm gonna use basic hand blender
and I try to make as much foam as I can.
Now I can spread it on the baking paper
which is inside the dehydrator and I'm gonna dry it.
50 degrees celsius until I end up
with nice crisps.
It will be probably around 10 hours.
Then you can just take it out very slowly from baking paper
and the chips is ready for plating.
You want to use it primarily for the desserts
but I can imagine this stuff even for main courses or
starters if you use the right seasoning.
Because you can put some salt, spices like paprika,
coriander, pepper, garlic powder
and it will be amazing even with the meat. You can be very creative.
