▪️ 120 g whole-wheat flour or spelt flour
▪️ 80 g chickpea flour
▪️ ¼ tsp cinnamon
▪️ ½ tsp baking soda
▪️ 210 g orange juice
▪️ 30 g neutral vegetable oil or coconut oil
▪️ 90 g Jerusalem artichoke syrup, chicory syrup, maple syrup, date syrup, honey, or any sweet syrup you enjoy
▪️ 100–150 g apples
Method:
1. Preheat the oven to 180°C / 350°F
2. Mix all the dry ingredients together
3. Add the orange juice, oil and syrup, then mix until combined
4. Cut the apples into small cubes, add them to the batter and gently mix again 5. Pour the batter into a 16 cm baking pan
6. Bake for about 30 minutes at 180°C / 350°F, using top and bottom heat without convection
7. Check the cake with a toothpick — it should come out without wet batter sticking to it If you replace the orange juice with water or milk, add 1 teaspoon of vinegar 🌿 Gluten-free option You can replace all the flour with chickpea flour if you enjoy its flavor, or use a mix of:
