Recipe:
Beets - 2 pcs (500 g)
Canned peas - 1 can
Onion - 1 pc (large)
Parsley - a few sprigs
Ground black pepper - 1/4 tsp
Dressing:
Pea juice - 50 ml
Apple cider vinegar - 1 tbsp
Salt - 1/2 tsp
Sugar - 1/3 tsp
Mustard - 1-2 tsp
Vegetable oil - 150 ml
Garlic - 1 clove
Grate the boiled or baked beets on a coarse grater or a Korean vegetable grater.
Slice the onion into thin half or quarter rings. Sauté in a small amount of vegetable oil in a frying pan until lightly golden. Add ground black pepper and stir. Remove from heat, let cool, and add to the salad.
Add a can of canned peas and finely chopped parsley.
Pour the pea juice into a deep bowl. Add salt, sugar, apple cider vinegar, and mustard and blend with an immersion blender on high speed.
When foam appears, with the blender running, gradually pour in the vegetable oil, keeping the blender running and without removing it.
Blend for 1-2 minutes until the mayonnaise thickens. Add the minced garlic.
Dress the salad with the desired amount of mayonnaise. Refrigerate the remaining mayonnaise. Enjoy! ❤️
