Apple season is upon us, so today we’re making three fall cocktails with one incredibly easy homemade ingredient, apple cider syrup. We’ll reduce fresh apple cider into a rich, concentrated syrup, then use it in three original apple cocktails: an Apple Old Fashioned, an Upstate Manhattan, and a Jamaican rum drink I call the Kingston Windfall. All three have a real apple bite without relying on overly sweet, artificial apple flavor. I hope you all enjoy these recipes as we welcome in autumn. Cheers!

2 oz (60 ml) Woodford Reserve Double Oaked Bourbon
1/2 oz (15 ml) apple cider syrup*
1 dash Angostura Bitters
1 dash Fee Brothers Black Walnut Bitters
Expressed orange oil & apple slices for garnish
THE UPSTATE MANHATTAN RECIPE 7:52
2 oz (60 ml) Rittenhouse 100 Proof Rye Whiskey
3/4 oz (22.5 ml) Cocchi Vermouth di Torino
1/4 oz (7.5 ml) apple cider syrup*
1 dash Angostura Bitters
1 dash Regan’s Orange Bitters No. 6
Apple slices for garnish
THE KINGSTON WINDFALL RECIPE 11:07
1.5 oz (45 ml) Appleton Estate Signature Jamaican Rum
3/4 oz (22.5 ml) fresh lemon juice
3/4 oz (22.5 ml) apple cider syrup*
1/4 oz (7.5 ml) honey syrup (3:1, honey:water)
1 dash Angostura Bitters
Dehydrated apple slice for garnish
*Apple Cider Syrup: Bring 4 cups unfiltered apple cider to a boil with 1 cinnamon stick. Reduce until you have about 1 cup remaining, roughly 60–90 minutes. Remove the cinnamon stick, add a pinch of salt, strain, let cool, and store in the fridge.
