The creator shares a cozy day in Cornwall inspired by \"Bramley Hedge,\" blending traditional British baking and cooking with autumnal walks. The video balances culinary creativity with personal health updates, reflections on family memories, and a passion for preserving vintage fashion.
Let's do some traditional British cooking inspired by Bramley Hedge.
Welcome back to my cozy channel. I have my bible here, the complete Bramley Hedge
and I've gone through it and I want to cook some of the recipes that are in here. I looked online
at the Bramley Hedge website and they have seasonal recipes which is absolute perfection.
I found some really sweet biscuits. They have delicious cakes, traditional British style
cooking so I want to make some of that which I'm really excited about. Here's an example of
one of the illustrations from inside this book. As you can see, so much detail, so whimsy,
cosy. There's an apple pie on the side. I think there's jam being made. It makes me unbelievably
happy. I do love this book so much and it's like my life inspiration. I've just had a food delivery
so I'm going to restock my fridge. I've just cleaned it all out and given it a nice wipe down
and I'm going to play songs from the Secret Garden film from the 90s if I can find a playlist.
Lovely. So first of all I'd like to make hazelnut shortbread from the Bramley Hedge website.
The ingredients are 180 grams of plain flour, 120 grams of butter, 50 grams of caster sugar
and 50 grams of hazelnuts so it's really basic ingredients. These need to be roasted for eight
to ten minutes. Time to beat the butter and sugar together. I'm just going to make sure the butter
is going to warm up a bit quicker by cutting it. The butter wasn't warm enough yet so I actually
used a whisk to cream the sugar and butter together. I popped the flour in in sections
just so I could figure out what the texture was going to be like. You do have to work this for
quite a while to get it to all form together but that's the kind of texture that you're looking for.
I didn't add the hazelnuts until I was confident that the mixture was going to work out okay.
You roll it out nice and thin. I just used an old jar but you could also use a small glass to cut
the circles out. I don't have a cookie or biscuit cutter at home and this worked well and the
cooking time was perfectly fine. If it gets a bit sticky you can just dust it with flour
and then I re-rolled three times in total to use all of it up. Make sure that you line your baking
tray just because of the butter content and once you've baked them you sprinkle sugar on the top
which is a really nice little touch. The cookies have cooled and I put some in a Tupperware just
so they don't dry out. They've got a lovely slight chew in the texture which is really nice.
If you don't like hazelnuts or praline type flavours then I would recommend leaving out the
hazelnuts but still making them because you could maybe add a little bit of cinnamon or something
if you wanted to or just google. You could follow that recipe and then check other flavour combinations
that you might like but yeah they're really nice and so easy because they cook in 12 minutes
and they only need like, I don't know, 15 minutes for them to cool.
So they're very cute and I like them. I think next time I might not bother with the hazelnuts,
it's just like an added ingredient and cost that though I like the nutty flavour I don't feel like
it's essential. It's a nice warming autumnal flavour though. It's got little flecks of
hazelnut throughout. I just used a blender instead of a food processor. I love this plate,
my dad got it for me, it's from Ikea. It's really cute. So you can see there that, because it
doesn't snap, it's got that nice chewiness. It's really lovely. After eating some lovely
warm biscuits we headed out for an autumnal walk. This was somewhere near Par, I want to say,
in Cornwall of course. It was really lovely to watch some of the leaves falling from the trees
in their lovely auburn colour. I really do love when it's raining leaves of all the seasons.
That would probably be my favourite thing apart from when the spring flowers start to come up.
I'm unbelievably hungry and I've not actually eaten today. So I'm going to make leek and
potato soup now because you know when you haven't eaten and you start to feel a little bit
sick and funny and a bit stressed. Not stressed but like physically distressed. So let's make
soup. I think from the photo that I showed you it looks more like a like a pea soup or something but
Ollie doesn't eat peas so we're not gonna do that. Buy maris paper potatoes and dice them into
little cubes if I can. Even-ish but yeah. Cut them like this and then like that and then when you
take the lid off it should smell lovely and fragrant and it should be glossing up a little
bit. I just could get a little bit longer than that before adding the leeks. I don't want them
to go stringy. Just steam them a bit longer in a bit of water. I used salt and pepper,
mixed Italian herbs, smoked paprika and because I didn't have any actual garlic I used garlic
aromat. It's important to season at this stage but also again at the end just to your taste.
I added in the leeks. Let those cook off just for a moment and then I added one stock cube.
You can kind of go with the flow with the amount of water you want the potatoes to be
nearly covered and then you can add more water if you need to. Easier to add than take away as
they say. Instead of using a blender usually I blend half and leave some lumps but I thought
I'd use a masher so that if you're watching and you don't have a blender you can see what the
texture comes out like. For the sake of protein and the fact that these are absolutely delicious
I added the bold bean chickpeas. I added creme fraiche as well and I definitely think the lemon
juice is a nice addition because I love lemon. You could add some herbs into here too if you
wanted. I usually cook this quite differently in the way that I let the potatoes go really really
soft and I add water slowly but I was so hungry today that I just couldn't do that but that makes
it so creamy if you do it really slowly and then you don't need to add any creme fraiche.
If you're willing to wait that is a bit more delicious. Absolutely beautiful when I went on
a walk at around 8am maybe fast forward to 10am and it's really rainy and moody. Quite typically
when I go out for a walk first thing the weather is lovely and then a couple of hours later it
changes. I do really enjoy going out for a morning walk and now I feel cosy when I've come home so
it's the perfect balance. I've got one two three four five very very ripe bananas that are making
my cupboard smell like banana so I'm going to make a banana bread hoping that this one will
be really nice. I've tried to just pick a highly reviewed recipe and follow it to a tea.
I'm just letting my banana bread cool in this interesting fashion but
I want to have some when it's warm so I might make a cup of tea.
I'm just having some of my banana bread. I think this is probably the best one I've made
in a really long time because I actually do really like this one and I quite like a stodgy banana
bread as long as it is properly cooked through. Why are you like this? Ollie get down!
I'm surprised Ollie didn't see this sign and think oh I have to go in there now.
We've been exploring more countryside places because there's so many and we've done so much
coast. I will be looking to get back into visiting the places we've already been to but it's quite
nice to look at these kind of landscapes and Ollie's a big fan of Dartmoor so we have been
going up in that direction a bit more. This does remind me of period dramas that I've watched on
the telly when I go to places like this. Hello little sweeties. I hope you've enjoyed this video
so far. I'm just going to have my jelly and ice cream for dinner. I haven't had this since I was
a child. My throat has been, it's not my throat but when I'm eating my right tonsil is a little bit
inflamed I think and when I swallow like the banana bread for example
it was just not that enjoyable of an experience so I don't really want, I don't like having
sometimes soup two days in a row so I'm not fancying that so I thought I'll just have some
jelly and ice cream and see how I go and then maybe I can eat something later. I think it's
probably my wisdom tooth. I've had problems with it on and off. It's not, I don't really get pain
sometimes the gum is a little bit, is it gum? Sometimes the gum is a little bit inflamed
but recently I've just been getting like an aching, like when I eat food or whatever I'll get
an aching back of the throat so yeah I'm just going to do salt water, rinse this, keep on top
of it and sort out a dentist appointment, eat more liquidy type food and I won't have a problem.
I don't mind having jelly and ice cream for dinner. It's so underrated. Do people still eat
jelly and ice cream very regularly? I don't really know. I don't know if I said
maybe a week or two ago that I'd hit 4 000 subscribers. It might have even been a little
bit longer ago than that but I was really proud of that because I remember hitting 3 000 and it
took me such a long time to get to 3 000 and I have noticed like some new names commenting which
is really lovely and it is so, it's so lovely getting comments from you all and I always look
forward to those of you that like comment again and again. I always look forward to seeing what
you're gonna say once I've posted but yeah 4 000 I think it keeps going around it's been around the
4 400 mark and then it like drops to 4 399 and then it'll be 401 and then it keeps like dropping
going up again. My next video is an evening routine so that's been requested um and I love
I love the request because it makes me think about my actual routine so I'm going to use
that question as my new way of building a routine that's more thought out because my
routine for the most part that at this sort of in between season stage is probably not
as lovely as it could be so I'm really thinking about what my dream evening routine looks like
and I'm going to start doing it um more consistently. Ollie's away with work just
randomly called him away for I got like some promotion thing going on I'm just gonna have a
cozy cozy evening kind of like having a sleepover but just with myself and I've got a long list of
films to watch that my friend Jasmine recommended so I've watched two off the list so far which I
watched earlier it had um Emma Watson in it I think it was ballet shoes it's quite nice to watch
the more girly films um on my own because otherwise if I watch them with Ollie then
he expects to watch a film I won't enjoy like I can't watch horror films I can't watch like
thrillers and horrible stuff happening to people I really really don't like that so I just like to
keep it emotional creative light whatever you didn't see my last video Ollie got that painting
in the background for our anniversary for my anniversary present it was five pounds outside
of an old man's house um yeah I love it I think it really looks cute there as well otherwise that's
just a white bit of wall um and with the open plan vibe I think it breaks it up a little bit
I'm really chuffed with that I think it's lovely also got a dress I need to show you
start collecting more secondhand vintage type pieces because 80s dresses from Laura Ashley
are not going to be in as good condition and they won't be as many of them if I don't start like
buying a little collection now um I also have this really beautiful vintage it's like a silver dress
with a tulle skirt and it's got little um buttons on it maybe silk I don't actually know
it's so lovely I got it when I worked did the social media for my favourite little boutique
shop and I was actually gifted the dress like my friend Annette owns the shop and she gave me the
dress I think the only condition was I had to try it on and show her which um I said it could be my
wedding dress because it's like it reminds me of a swan I might buy a mannequin and put it in my
office and just have it on display but what is the likelihood of moths eating eating it I really
really want to keep that dress forever I want to build a little collection of vintage dresses
so that if in the future I have daughters or granddaughters or whatever um or just family
members that might like it because when I say to my mum I want this I want this she says oh I had
that in the 80s I had that in the 90s and I said you kept none of it none of it I could have had so
many lovely clothes also I wish my nan had kept her 60s and 70s stuff and I know you can't just
keep clothes for the sake of imaginary children but that's what I'm gonna start doing because I
was just so disappointed and my nan that passed away like she was probably quite she was quite a
bit shorter than me so I'm not sure her stuff would have fit me because um my nan and mum are
the same height as me I'm five foot nine whereas um my I used to call her nanny no doggie because
the first time she heard me she was nanny doggie she always had dogs and then when her
her last dog died and she didn't get another one I started calling her nanny no doggie and then I
said it in front of her once not thinking how sensitive that is but she did find it funny she
always laughed about everything um she was a real giggler and once my granddad like fell out of bed
and he couldn't get up and they had to call help she laughed she couldn't stop laughing like she
fits of giggles or fit of giggles before she passed away we looked through her photos and
I'd never seen them before they were so beautiful and she was such a fashionista she had some
amazing clothes in the 60s she hadn't kept any of them but I'm going to start collecting some
bits that were from maybe 80s 90s 60s 70s and just keeping them and I don't care if I'm going
to wear them or not I'm just going to keep them and have a cute little collection it's probably
going to be the slowest built collection in the world but I guess if I make it into my 70s or
beyond it'll be substantial enough hopefully anyway I have really really really enjoyed this
video um I need to do some more videos like this like some traditional British cooking things that
your grandma might have made for you that is the vibe um and I will see you for the evening routine
which I'm going to try and make as romantic and lovely as possible for a bit of inspiration going
into autumn because I know lots of people struggle with going into the cooler months and the darker
months so I'm going to try and make it as magical as possible lots of love and I'll see you soon
