🎃 Fall Pumpkin Brioche! the Forgotten French Method That Will Amaze You

These golden pumpkin brioche rolls are incredibly soft, fluffy, and full of warm fall flavor! 🍂 Today I'm sharing a beautiful French-inspired method that turns simple ingredients into wonderfully tender homemade brioche.
Fresh pumpkin gives the dough its gorgeous golden color and helps the rolls stay soft and delicate. And from one dough, we'll make TWO beautiful shapes — classic fluffy brioche rolls and elegant spirals.
The recipe is easier than it looks, and the result feels like something straight from a French bakery. Perfect for a cozy fall breakfast, afternoon tea, or a warm cup of coffee. ☕️
🥐 INGREDIENTS:
For the yeast mixture:
• 125 ml (½ cup) warm milk
• 11 g (about 1 tbsp) dry yeast
• 2 tbsp sugar
• 2 tbsp all-purpose flour
For the dough:
• 600 g (about 4¾ cups) all-purpose flour
• 150 g (5.3 oz) pumpkin
• 125 ml (½ cup) water
• 1 egg
• 60 ml (¼ cup) neutral vegetable oil
• 1 tbsp sugar
• 1 tsp vanilla
• ½ tsp salt
For the egg wash:
• 1 egg
• 2–3 tsp heavy cream
For finishing:
• Powdered sugar
🔥 Bake for about 30 minutes at 180°C (350°F).
