Every time my husband gets sick he asks for one thing, strawberry ice cream. So I made a version
with no eggs, no stovetop, just real ingredients and now he won't touch the store-bought stuff.
So to get started we are going to grab three cups of frozen strawberries and we're just going to put
them in a bowl here. We are using frozen strawberries because they release a little
less of the water than fresh ones would and we can control this ice cream just a little bit better.
Also in my opinion it's cheaper and easier because I don't have to prep the strawberries.
To our strawberries we are going to add three fourths cup of sugar. Then we're going to take
a spatula and we're just going to kind of stir that around a little bit. You guys it's really
hard to stir you know frozen strawberries and sugar around but a little bit. We're going to
just stir that around trying to get that sugar on all the strawberries and then this is the boring
part. We have to just let these thaw for about 10 to 15 minutes so that way they can release a little
bit of those juices and they'll blend a little bit easier when we do that in the blender and
mash a little easier when we mash them. So just let them sit for about 10 to 15 minutes and then
after that 10 to 15 minutes we're going to give those strawberries a good stir. You can see that
that sugar is starting to like meld into the strawberries and they're starting to release
their juices just a little bit. We are going to take about two cups of this strawberry sugar
mixture and we are then going to blend them in our blender. The exact amount of this is up to you.
Whatever is left in here is what we're just going to mash up so that we can have chunks of
strawberry in our strawberry ice cream. So if you don't want any chunks then just go ahead and blend
all of those strawberries. All right I think that's pretty good and now we're just going to
blend these up till they're nice and smooth and once those are smooth we're just going to set
them aside. We'll get rid of this blender here as we're done with that. So now with our remaining
one cup of strawberries I'm just going to take a potato masher and I'm just going to mash these up
so we can get chunks. Now if these are too frozen we can just stick them in the microwave for just
a bit just to like help make it a little softer so this isn't quite so hard for you but I think
we're okay. This is just going to give us those chunks that we want throughout that strawberry
ice cream. All right and once we're done with that we'll set that aside and we need to grab
our ice cream maker. Now we're going to work to bring our ice cream together so we're going to
use that bowl that we started with with our strawberries in it and I'm going to add our
frozen blended strawberries to it. I think the hardest part about a blender is getting it all out
and then to that bowl we're going to add one and a half cups of cream
and a half cup of whole milk and then lastly we're going to add a half of a tablespoon of vanilla.
I'm using my homemade vanilla so it has such a great flavor. Then we're just going to grab a whisk
and whisk that all together. It's going to kind of get stuck in your whisk but it's just a nice way
to try and incorporate it all so we do want to try really hard to incorporate it so it's kind of
smooth-ish at least minus those strawberry chunks so that way it makes a really good
creamy strawberry ice cream and then once we've got it incorporated the whole mixture turns pink.
Now I need to go grab my frozen bowl for my ice cream maker. You do want to make sure that that
bowl has been frozen for at least 24 hours so that way it can really freeze this ice cream
really well. All right now that I have my bowl I'm going to put that in my ice cream maker
then I'm going to put this little insert in put my lid on. If you don't have a good ice cream
maker I will link this one in the description below. I love it. It works great. It's super easy
too. Then I'm going to give this ice cream mixture a good stir again and we're going to pour it in.
Make sure that your bowl has a pour spout on it or that it's at least easy to pour in. It'll
make your life a lot easier. Then I'll just put that lid on here. I'll hit the ice cream button
and then I'll hit start. It takes it about 30 minutes to be done but mine just beeps at me
and it lets me know when it's done and then we can either eat it or put it in the freezer.
And then once your ice cream maker beeps at you or whatever it does to tell you that it's
done we want to get this bowl off and get this ice cream in the freezer.
Well this froze up perfectly. Those frozen strawberries in there. So I just remove this
center piece and then of course scrape that off because we want that ice cream and then you're
going to put it in containers. Oh I can see those strawberry pieces in there. So good.
I just use a wooden spoon to get this out of the bowl because it doesn't scratch my
ice cream bowl. Otherwise it scratches it and that's the most expensive part of the ice cream
maker. You can certainly eat this right away. This would be considered soft serve ice cream
or we can put it in the freezer and eat it later after it freezes. Usually around you know two to
four hours just depends on your freezer how cold everything is etc etc how fast you get it in that
freezer. Homemade ice cream does freeze a little harder so you will want to let it like come to
room temperature or not not room temperature you will want to let it come a little bit to
temperature when you pull it out of that freezer just so it's not quite so hard to scoop up.
Just store it so it doesn't get icy. I do like to place like some plastic wrap right over the top
of it and then that will prevent any of the ice crystals from really forming on there. It lasts
for quite a while in your freezer but to be honest we eat it pretty quickly so I never have to worry
about that. Then you just put a lid on put it right in the freezer and then enjoy. Thank you guys so
