The Stiggins’ Fancy Pineapple Daiquiri is a daiquiri built around Planteray Stiggins' Fancy Pineapple rum — here's how to make one at home.
…
Let's make Stiggin's Fancy Pineapple Daiquiri.
To make this drink, we're going to start with our lemon juice.
One half ounce of freshly squeezed lemon juice.
One half ounce is 15 milliliters.
One third ounce of your Demerara syrup.
And I do have a recipe for Smuggler's Coast Demerara syrup.
The recipe will be down below if you want to check it out.
Otherwise, you can just make a simple syrup using Demerara sugar.
And this is a one-to-one.
And so one third ounce is 10 milliliters.
Finally, your Stiggin's Fancy Pineapple Rum.
We're going to put in one and two thirds ounce of the rum.
One and two thirds ounce is 50 milliliters.
I'll check my math later.
Add some ice.
And give it a shake.
Now, the recipe does specify to double strain.
So I'm going to double strain this into my coupe.
Wait.
Tap, tap, tap, tap, tap.
Garnish.
The garnish is a twist of lime.
And I was a little bit shocked when I saw that.
But it really is a twist of lime, not a twist of lemon.
Anyone can explain to me why a lime instead of a lemon when you're using lemon juice?
Let me know in the comments down below.
I'm happy to learn things.
Happy to learn things.
Ah, fingers.
So I'm going to express.
Twist.
A twist.
Express is twisting.
Well, now I'm going to twist a little.
I'm going to drop that.
I'm probably just going to put it inside because it's going to fall off anyway, right?
And then some pineapple.
And there you have it.
Your Stiggin's Fancy Pineapple Daiquiri.
Drink with good spirits.
I'm going to hold on to this so I don't get it through my nose.
