The recipe is customizable, allowing for dark chocolate to make the treats vegan, and focuses on simple preparation using a microwave or double boiler.
Welcome back to Mimi's Organic Eats. Today we're making healthy chocolate peanut butter cups.
This homemade candy recipe has only six organic ingredients and no refined sugar.
Let me show you guys how to make them. So first we're going to need a large heat proof bowl.
I like to use glass. So we're going to be using milk chocolate today because that's a classic of
traditional Reese's peanut butter cups. But if you guys want to use dark chocolate you can also do
that too. If you use dark chocolate then these are also naturally vegan. So I'm just using the
organic milk chocolate bars. These are my favorite for melting. They work really well.
And I'm just going to break these up into small pieces and add them into this bowl along with
our coconut oil. Once you have all the chocolate chopped with the coconut oil in a large bowl
then we're just going to melt this. You can do this doing 30 second intervals in the microwave
stirring between each one or you can also do this over a double boiler. So while the chocolate is
melting we're going to line a cupcake pan with liners. And I'm just using a regular size cupcake
pan here. If you guys want to make these into minis you can totally use a mini cupcake pan too.
That also works. So I like to transfer all of the melted chocolate into a large pyrex measuring cup.
This is going to make it super easy to pour into the cupcake liners.
Now we're going to fill the cupcake liners one third with the melted milk chocolate.
Now we're just going to pop this in the freezer so the milk chocolate can set completely.
So now we're going to grab another large mixing bowl and mix up the peanut butter filling.
So first we're going to add in our coconut oil. And I'm just going to pop this in the
microwave to melt it for a few seconds. You could also do it in a pot over the stove top if you prefer.
Next we're going to add in our maple syrup and I just like to weigh it right into the bowl.
And then we're going to add in our creamy peanut butter. Now we're just going to whisk this
together until everything is combined. Now that our milk chocolate is hardened we're just going
to add the peanut butter filling into each cup. And I just like to do a big spoonful. You can bang
the tray just a little bit to smooth out the peanut butter. So now we're going to pop this
back in the freezer. So now we're going to chop up some roasted and salted peanuts for the topping.
I like to use roasted and salted peanuts which is what I have today. If you guys want to use raw
peanuts that also works too. And if they have the skin that's fine or you can also do without the
skin. Now we're just going to top the peanut butter cups with the remaining chocolate.
Now we're just going to sprinkle the tops with the chopped peanuts. And if you know me you know I
can't resist the flaky sea salt. So we're going to sprinkle a little bit of flaky sea salt right on
top. But this part is totally optional. Now you guys can transfer these into the fridge or the
freezer to set. So once the chocolate is set then it's time to transfer these to the fridge and then
they're ready to serve. If you guys enjoyed this video be sure to drop a like and leave a comment
