Late Summer Harvesting, Cooking & Thrifting | A Cosy Day of Homemaking in Rural England

Welcome to a gentle late summer day in the English countryside, making the most of these last weeks before the season begins to change.

In this video, I spend some time gathering produce from the garden, including sweetcorn, potatoes and pattypan squash, before making homemade salmon fish cakes with our potatoes and enjoying the harvest for dinner. I also make tomato Keftedes, a vegetarian take on a Greek recipe, pick some flowers for the house, spend some time outside in the garden and have a little look around the charity shops.

With autumn beginning to make an appearance, I’m not quite ready to let summer go just yet. So for now, I’m enjoying these simple late summer days, cooking from the garden, pottering around at home and making the most of the season.

Tomato Keftedes by Tessa Kiros:

300g tomatoes
70g red onion
3 tbsp fresh/dried mint
100g plain flour
1 tsp baking powder
olive oil for frying

Chop the tomatoes, onion, mint and add to a bowl. Add the baking powder and half the flour, stir. Mix the rest of the flour with 80ml of water and add to tomato mixture. Season.
Heat oil in a pan and fry the keftedes in small batches until cooked through. Season again before serving. Enjoy!
