You all loved my Assam Jollof recipe so for episode 9 of Sunday Rice, we're making Assam
fried rice. To make it, you're going to need goat meat or mutton. If you can't find either,
you can also use beef. Season the goat meat with onions, salt and beef seasoning cubes.
Add lots of water, cover and allow to cook until the meat is slightly soft. When that's done,
separate the meat from the stock. Then filter the stock back into the pot. It's very important to
filter the stock to get rid of the little bones that can cause injury. Next, prepare your rice.
I'm using golden seller basmati rice and I already rinsed it several times until the water ran clear.
Add the rice back to the pot. Add some white pepper, salt and curry powder. Add enough water,
then cover and cook for about 20 minutes. While the rice is cooking, grill or air fry the goat
meat. Before grilling, spray with oil so it browns nicely. If you don't have an air fryer or grill,
you can also fry it. When the goat meat is nice and brown, debone then cut into bite-sized pieces.
Set that aside and save for later. Next, check on the rice. The rice should be fully cooked after
20 minutes. Give it a stir to release the steam so it stops cooking. For my veggies, I'm using
onions, green bell pepper, red bell pepper and lots of atarido or scotch bonnet peppers.
If you're using the really spicy scotch bonnet peppers, especially the ones found abroad,
you want to keep it to one or two peppers or remove the seeds and stems so your dish isn't
too spicy. Go ahead and dice the onions and peppers. You also need to mince some garlic
and ginger. Next, heat up a little oil in a large wok then add the onions. Fry for about one minute
then add the minced garlic and ginger. Keep frying for a few minutes or until it's fragrant
then add the scotch bonnet peppers. Continue frying for a few more minutes before adding
the goat meat. Add the goat meat, mix, add the red bell peppers, the green bell peppers,
then season with salt, chicken seasoning cubes and curry powder. Mix everything very well and
stir fry just for about two minutes. We don't want to fry this for too long so the peppers don't
overcook. Next, create a hole at the middle for easy mixing then add the cooked rice. Finally,
give everything a really good mix, stir fry for about three minutes and your asam fried rice
is ready. As always, the written recipe and all the ingredients used will be in the description
box below. Let me know if you do try this. Don't forget to like this video if you enjoyed this
