This decadent chocolate mousse cake combines a soft, rich chocolate cake base with a smooth and creamy chocolate mousse layer, finished with a glossy chocolate ganache and chocolate sprinkles.
Every bite has the perfect combination of soft chocolate cake, light and creamy mousse, and rich chocolate ganache. It’s an elegant dessert that looks beautiful and tastes absolutely irresistible!
•INGREDIENTS:
🍰 For the Chocolate Cake Layer:
All-purpose flour — 1 cup (120 g)
Butter, softened — ½ cup (113 g)
Granulated sugar — 1 cup (200 g)
Cocoa powder — 45 g
Baking powder — 1 tsp (5 g)
Milk (warm)— 3 tbsp (45 ml)
Salt — a pinch
🍫 For the Chocolate Mousse Layer:
Heavy cream — 200 ml
Chocolate chips — 200 g
Heavy cream — 600 ml
Powdered sugar — ½ cup (about 60 g)
*🍫 For the Top Ganache:
Heavy cream — 200 ml
Chocolate chips — 150 g
Optional Decoration:
Chocolate sprinkles — as needed
• INSTRUCTIONS:
1. Make the Chocolate Cake
Preheat the oven to 350°F (175°C).
Grease and line the bottom of a round cake pan with parchment paper.
Beat the softened butter and sugar until smooth and creamy.
Mix the flour, cocoa powder, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture.
Add the milk and mix until you have a smooth, thick batter. Do not overmix.
Spread the batter evenly in the prepared pan.
Bake for approximately 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before assembling.
2. Prepare the Chocolate Mousse
Heat 200 ml heavy cream until hot but not boiling.
Pour the hot cream over 200 g chocolate chips.
Let it sit for 1–2 minutes, then stir until completely smooth and glossy.
Allow the chocolate mixture to cool until it is no longer warm.
In another bowl, whip the 600 ml heavy cream with 60 g powdered sugar until soft-to-medium peaks form.
Gently fold or whip with a hand mixer the cooled chocolate mixture into the whipped cream until smooth and evenly combined.
Place the cooled cake base back into a cake ring or springform pan.
Pour the chocolate mousse over the cake and smooth the top.
Refrigerate for at least 4 - 6 hours , preferably overnight, until completely set.
3. Make the Top Ganache
Heat 200 ml heavy cream until hot but not boiling.
Pour it over 150 g chocolate chips.
Let stand for 1–2 minutes, then stir until smooth and glossy.
Allow the ganache to cool slightly so it is pourable but not hot.
Pour the ganache over the chilled mousse layer and gently spread it to the edges.
Decorate with chocolate sprinkles if desired.
4. Chill and Serve
Refrigerate the finished cake for another 30–60 minutes to allow the ganache to set.
Carefully remove the cake ring.
Use a warm, sharp knife to cut clean slices.
Serve chilled for the best texture.
