From tender green shoots to a fragrant expanse in the fields, the wait for its maturity feels like anticipating a gift bestowed by the land itself.

At last, the time for harvest arrives.
The fresh fennel is brought into the kitchen, transformed into steaming wontons and buns with fennel filling, as well as crispy fennel youtiao (fried dough sticks) and golden fennel-potato cakes.

Yet, the story does not end there.

The fennel is left to bloom and set seed, allowing the mature fennel seeds to be gathered.
These tiny seeds are then used to stew a pot of pork trotters, infusing the broth with the herb's distinctive aroma.
