The History of Tofu — The Accidental Food That Fed an Empire
From a failed immortality experiment in ancient China to Buddhist monasteries, Japanese kitchens, American Chinatowns, and modern supermarkets, this is the 2,000-year history of tofu.
According to legend, tofu was accidentally created when mineral salt curdled hot soybean milk. It soon became an affordable source of protein, helped sustain Buddhist communities that avoided meat, and spread across Asia through monks, merchants, and migrants.
Centuries later, Benjamin Franklin wrote about it, Chinese immigrants preserved the craft in America, and The Book of Tofu helped introduce it to mainstream Western audiences.
