🫐 Blueberry & Strawberry Crumble Cake 🍰
A moist yogurt cake with juicy berries and a buttery crumble topping

🧈 Crumble Topping 🧈
🧺 Ingredients 📌
80 g all-purpose flour
50 g brown sugar
60 g cold unsalted butter, cubed
½ tsp cinnamon
Pinch of salt

👩‍🍳 Instructions 📌
Mix the flour, brown sugar, cinnamon, and salt. Rub in the cold butter with your fingertips until the mixture looks like coarse crumbs. Refrigerate while preparing the cake batter.

🍰 Cake Batter 🍰
🧺 Ingredients 📌
250 g all-purpose flour
2 tsp baking powder
¼ tsp salt
150 g granulated sugar
2 large eggs (room temperature)
180 g plain Greek yogurt
100 ml neutral oil (canola or sunflower)
1 tsp vanilla extract
Zest of 1 lemon
200 g fresh blueberries
120 g fresh strawberries, diced
1 tbsp flour (to coat the berries)

1. Prepare the Oven
Preheat the oven to 175°C. Grease and line a 9-inch round cake pan with baking paper.

2. Mix the Dry Ingredients
In a bowl, whisk together:
Flour
Baking powder
Salt

3. Mix the Wet Ingredients
In a separate bowl, whisk the eggs and sugar until smooth.
Add:
Greek yogurt
Oil
Vanilla
Lemon zest
Mix until well combined.

4. Combine
Fold the dry ingredients into the wet ingredients just until no dry flour remains. Do not overmix.

5. Add the Fruit
Toss the blueberries and diced strawberries with 1 tablespoon flour.
Gently fold them into the batter.

6. Assemble
Pour the batter into the prepared pan.
Sprinkle the crumble evenly over the top.

7. Bake
Bake for 50–60 minutes, or until:
The crumble is golden brown.
A skewer inserted into the center comes out clean (a few moist crumbs are fine).
If the top browns too quickly, loosely cover with foil during the last 10–15 minutes.

8. Cool
Let the cake cool in the pan for 15 minutes, then transfer to a wire rack or serving dish to cool completely.

🍋 Lemon Glaze (Optional)
For a light finishing touch, mix:
80 g icing sugar
1–2 tbsp fresh lemon juice
Drizzle over the cooled cake.

🌿 Tips
Use firm, ripe strawberries so they don't release too much juice.
Coating the berries with flour helps keep them suspended in the batter.
This cake is even more flavorful the next day.
