The process involves creating a custom spice blend, searing proteins (sausage, chicken, and shrimp), sautéing a vegetable base with tomato paste, and simmering long-grain rice in a flavorful chicken broth until tender.
hi foodies welcome back today we're making original jambalaya for episode 6 of our
sunday rice series we'll start by making a simple seasoning mix so in a bowl combine cayenne pepper
garlic powder onion powder salt black pepper chicken bouillon powder and paprika give everything
a good mix use some of the seasoning to season the chicken thighs i'm using boneless skinless
chicken thighs cut into bite-sized pieces mix well then set aside next season the shrimp with
a little of the same seasoning mix the shrimp has already been washed and deveined now heat up a
wide pot then add the sliced smoked sausage you usually don't need any oil especially if you're
using a non-stick pot because the sausage will release some of its own fat cook for about three
to four minutes until nicely browned next add the seasoned chicken to the pot then cook on high heat
for about four to five minutes spread the chicken out into a single layer so it browns well
let it sit for a minute or two before stirring then continue stirring until it's nicely browned
on all sides once the chicken is nicely browned transfer it to the same bowl as the sausage then
set aside if the pot looks a little dry add a small drizzle of oil next add the seasoned shrimp
in a single layer and cook over high heat for about one to two minutes per side once the shrimp
are pink and golden around the edges take them out so they don't overcook now it's time for the veggies
here i have some chopped onions diced green and red bell peppers and diced celery add the veggies
to the pot then add the minced garlic stir fry for about one to two minutes until the vegetables
start to soften then add the tomato paste keep stirring so it doesn't burn add some of the spice
mix from earlier fry for a couple more minutes to get rid of that raw tomato taste now it's time
to add the rice i'm using long grain white rice for this recipe and i've already washed it several
times until the water ran clear after adding the rice give everything a good mix so it's well coated
in the tomato mixture let the rice toast in a hot pan for about a minute before pouring in the water
and chicken broth add some more of the seasoning mix dried thyme and a little extra salt give
everything a good stir before returning the chicken and sausage back to the pot add some
worcestershire sauce if you have on hand it's optional but it adds a rich flavor to the dish
cover and cook on low heat for about 30 minutes or until the rice is fully cooked when it's done
return the shrimp back to the pot give everything a good mix the rice may seem a bit sticky at this
stage but that's completely normal as it cools down and rest for a few minutes the grains will
finish off with some chopped spring onions for a pop of freshness and color
and your jambalaya is ready to serve if you enjoyed this recipe don't forget to give this
video a thumbs up subscribe if you haven't done so already and let me know in the comments if
you'll be giving this recipe a try thank you for watching and i'll see you in the next video
