Simple and cozy slow living in the English countryside - slow summer moments, cozy days spent cooking and painting in the garden, beautiful summer walks in nature. I'm trying to find new meaning to happiness, learn to enjoy every single moment and find simplicity in every day. Happiness is a verb - I explore this subject a little bit more in this video.

This are my slow, endless days of summer living in my village home in England.

Gooseberry Fool Recipe:

550g of gooseberries (can be substituted with any other fruit or berries, but best to go for tangy ones)
50ml of water
4 tbsp sugar

Top and tail gooseberries (cut off tops and bottoms), place in a small saucepan, add water and sugar and bring to a slow simmer. Simmer until all fruit disintegrated and thickened. About 30 mins.

For the cream:
150g plain yoghurt
200ml double cream
2 tsp vanilla extract
2 tbsp caster sugar

Place everything in a bowl and whisk by hand until slightly thickened.

Sugar snap (cinnamon) cookies:
100g flour
3 tbsp sugar
1 tsp cinnamon (or ginger)
1 tsp baking soda
1 tbsp honey or golden syrup
50g melted butter

Combine all ingredients together, mix by spoon and then continue mixing by hand until a small ball forms.
Refrigerate for 30 mins
Shape into small balls (about 1 tbsp of dough)
Place on a baking sheet, slightly press with the thumb.
Bake for about 13 mins at 180C/ 356F
