2 eggs.
Today is a perfect day for a lemon and apple cake, isn't it?
A pinch of salt.
120 g sugar (1/2 cup).
60 ml vegetable oil (1/4 cup).
I've run out of sunflower oil, so I have to choose between olive oil and avocado oil.
Olive oil has too intense a flavor for baking, but avocado oil is fantastic!
It has a beautiful emerald green color and is one of the healthiest oils we can use.
2 apples.
Normally, such beautiful apples tend to taste bad, but today we are in luck!
These apples have an incredible aroma and a fantastic taste!
I always say: If the apples are sweet and slightly tart, the cake is guaranteed to be a success!
Today I'm not using milk; the moisture from the grated apples is sufficient.
The avocado oil balances the fat content of the whole milk.
Grease the casserole dish with a little butter.
Baking paper.
1 lemon.
I always grate the lemon very finely.
On a trip to the area around Naples, where lemon cultivation is widespread, I learned that the yellowest part of the lemon peel has the most intense aroma.
Juice of 1 lemon.
1 egg.
2 tablespoons of sugar (approx. 60 g).
1 tablespoon of cornstarch (30 g).
240 ml milk.
Bring to a boil over medium heat.
Stir constantly to prevent the pudding from sticking to the bottom of the mold.
Bake at 180 °C (356 °F) for approximately 40–45 minutes. Delicious!
It turned out even better than usual today! I really enjoyed cooking together.
